Spicy Baked Tofu and Spinach Wrap

Use up any remaining sweet summer corn on the cob with this straightforward dish. It’s a terrific addition to summer meals because it’s light and quick.

Ingredients

  1. cooking spray
  2. 1 (12 fluid ounce) bottle Buffalo wing sauce (such as Frank’s®), or to taste
  3. 1 (12 ounce) package extra-firm tofu, cut into cubes
  4. 4 slices Swiss cheese
  5. 4 honey-wheat tortillas
  6. 5 Campari tomatoes, sliced
  7. 1 cup fresh spinach, or to taste

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C). Prepare a baking sheet with cooking spray.
  2. Pour Buffalo wing sauce over tofu in a large bowl to cover completely and toss gently to coat; marinate tofu at least as long as it takes for your oven to reach temperature.
  3. Remove tofu from the bowl and spread onto the prepared baking sheet. Coat top of the tofu cubes with extra sauce and spray with cooking spray.
  4. Bake tofu in preheated oven for 10 minutes. Flip the cubes, spray tops again with cooking spray, and continue baking until firm, about 10 minutes more.
  5. Put 1 slice Swiss cheese atop each tortilla; heat in microwave oven to melt the cheese, about 30 seconds.
  6. Divide tomato slices between the tortillas; top with about 1/4 of the baked tofu and 1/4 of the spinach. Wrap tortillas around the fillings.
  7. If you want extra flavor, marinate the tofu in the Buffalo wing sauce longer.

Made as written except that I used regular tortilla’s and also sprinkled pepperjack cheese on the top layer before rolling. The swiss was nice melted on the bottom but I just wanted some non melted cheese on the top. This crisped up nicely and even though I’m not a huge tofu fan, this is one I would definitely make again.

Tasty, but I think it needs something more. I’m considering including caramelized onions and substituting bleu cheese crumbles for the melted Swiss next time I make it but doing so would complicate the recipe and muddy the concept of “cheap, quick and easy”.
