Spaghetti with Ramps

When ramps are in season, I make this simple pasta dish frequently in the spring. It just takes 20 minutes to prepare.

Ingredients

  1. 1 (16 ounce) package spaghetti
  2. 1 tablespoon olive oil
  3. ½ bunch ramps – leaves washed, dried, and finely chopped
  4. salt and freshly ground black pepper to taste
  5. 1 tablespoon freshly grated Parmesan cheese, or to taste

Instructions

  1. Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain.
  2. Meanwhile, heat olive oil in a skillet over low heat. Add ramps and cook until softened, 3 to 5 minutes. Add cooked spaghetti and season with salt and pepper. Sprinkle with Parmesan cheese and serve.
