Ingredients
- 1 ½ teaspoons kosher salt
- 1 ½ teaspoons light brown sugar
- 1 ½ teaspoons ground black pepper
- 1 teaspoon paprika
- ½ teaspoon ground mustard
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon oregano
- 6 bone-in center-cut pork chops (about 1-inch thick)
Instructions
- Preheat the smoker to 250 degrees F (120 degrees C). Add wood chips according to the manufacturer’s directions.
- Combine salt, brown sugar, pepper, paprika, ground mustard, garlic powder, onion powder, and oregano in a small bowl. Stir until evenly combined. Sprinkle over both sides of each pork chop.
- Place pork chops directly on the smoker grate. Smoke for 2 hours 30 minutes. Remove chops from the smoker and let rest for 10 minutes.

I am not sure if was the pork chops i used or the fact that I am not a big fan of pork but mine had a mild metal taste. They looked good but could not eat much of it.
I made this for dinner with a few tweaks and it is AWESOME!!! First off, I doubled the recipe (except for the meat) and added extra garlic because we are huge garlic lovers. I used smoked paprika instead of regular because that’s what I had on hand. Then I added just enough canola oil to turn the mixture into a thick marinade and stirred in about 2 Tbsp of prepared yellow mustard. We poured the marinade over the pork and cooked it in the crockpot for 7 hrs on low. The flavor is AMAZING!! Can’t wait till our smoker gets fixed so we can try it that way too!
