Easy pineapple pulled pork dish for the slow cooker.

Ingredients

  1. 1 (3 pound) boneless pork butt roast
  2. 1 (20 ounce) can unsweetened crushed pineapple in 100% pineapple juice
  3. 2 tablespoons minced garlic
  4. 2 tablespoons ground cumin
  5. 2 teaspoons kosher salt
  6. 1 teaspoon red pepper flakes
  7. 1 pinch freshly ground black pepper to taste

Instructions

  1. Place pork roast into a slow cooker. Combine crushed pineapple, garlic, cumin, salt, red pepper flakes, and pepper in a bowl. Pour over pork roast. Cover slow cooker.
  2. Cook on Low until pork roast is cooked through, about 8 hours. Remove pork roast from slow cooker, cut off any fat, and shred the meat using 2 forks. Return meat to the slow cooker and mix with the juices.
  3. If you like, you can crisp up individual servings of shredded pork in a skillet over medium-high heat; no oil is needed.

I made this and once it was shredded I made flautas with it. Delicious! I removed the pineapple from the crockpot before filling the flautas with the pork. I increased the red pepper flakes to 1 1/2 tsp; has a nice heat to it.

This was excellent as far as texture and very simple to make. My recommendation is you cook the pork and then leave the sauce in with the meat for a few hours on warm- otherwise, it does not absorb the flavor. Just keep checking to be sure there’s nothing getting too tough or burned (pineapple will do that in a crock pot, unfortunately). Per our personal tastes, I used pineapple in syrup, because we felt it needed a little more taste of fruit and sugar, and I increased the red pepper flakes on my second try. Wonderful and contains a very slight “zip” that way.

I really liked this recipe since I was looking for pulled pork without all the sugar of a barbecue sauce. I sautéed it as suggested and wouldn’t make this again without that last step.

I made this and really liked it. However I added some barbecue sauce and used more pineapple. At the very end I added fresh pineapple because I had it on hand for a fruit salad. Truthfully the second day all the flavors really were enhanced! I will make it in two weeks and will serve it on slider rolls but will offer it on rice for my gluten free friends. Great and easy recipe. But consider adding some barbecue sauce and fresh pineapple! I will make it again.

Easiest recipe ever! It was a big hit for my guest. I was nervous but with your favorite BBQ sauce, cole slaw and potato salad – one can not miss. The meat just fell off the bone and extremely juicy.

Add some onion, guajillo, ancho & chipotle chile peppers with 1/2 cup OJ and you’ve got al pastor, GREAT for tacos! Sometimes I also like a bit of liquid smoke too. 😉

This recipe is great with a couple of modifications I made that you may like too 🙂 I used 1/2 of very ripe fresh pineapple sliced in circles with the core removed, laid it in the bottom of the pot sprinkled with 1/4 cup brown sugar. Placed a 1 & 1/2 pd pork loin (due to the lack of fat, it has less juice) on top; pour 1/2 cup veggie broth, water etc. over & 1 Tablespoon of apple cider vinegar; seasoned it as directed. It was moist & juicy, yum. We put it on Hawaiian rolls 😉

Perfect! I’m not a fan of pineapple but you don’t have to be to love this recipe. You can hardly taste it and its main purpose is to tenderize. The absolute key to this recipe is crisping it up in a skillet as the recipe submitter mentions. I made two different pineapple pulled pork today and hands down this one was the winner. Excellent!

I used 1 &1/4 lb pork loin as that is what was in my freezer. I was worried about not enough liquid & added a small can of pineapple juice & cut back slightly on red pepper flakes and cumin. We had it over rice and it was great although it could have used a tad more juice- not fatty at all!
