Ingredients
- cooking spray
- 1 pound extra-lean ground beef
- 2 egg whites
- ½ cup Italian-seasoned bread crumbs
- ⅓ cup finely chopped onion
- ⅓ cup Worcestershire sauce
- ¼ cup ketchup, divided
- 1 ½ tablespoons brown sugar
- 1 teaspoon salt
- ¼ teaspoon ground black pepper
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Spray a loaf pan lightly with cooking spray.
- Combine beef, egg whites, bread crumbs, onion, Worcestershire sauce, 2 tablespoons ketchup, brown sugar, salt, and pepper in a bowl. Press into the prepared loaf pan.
- Bake in the preheated oven, uncovered, until no longer pink in the center, about 45 minutes. Spread remaining ketchup over the top and continue baking until ketchup bubbles and thickens, about 15 minutes more.

The only change I made was to halve the onions and replace that half with green peppers. This was perfect. I’ve also made it as muffin sized and baked for 25 to 30 minutes. Both versions came out great.
This is best meatloaf I’ve ever made. I used to cook a lot of meatloaf meals. Mexican, Italian, Mediteranian, Barbecued, Smoked, Stuffed, you name it. I tried this recipe and It will now be the new “base recipe” for other styles as well as my standard loaf. Note: I used Impossible Burger rather than ground beef. I doubled the ingredients and divided into two loaves to facilitate cooking in my air fryer. I forgot to take a picture, but will do so next time.

I really loved this recipe. My husband is an avid meatloaf eater and this size was just perfect. Enough for a sandwich for him the next day. Is very flavorful and he didn’t know that it was a healthier version. Will definitely make again.
Great job on this recipe. Easy to make, full of flavor. Don’t worry I made up for the lack of fat by serving it with garlic mashed potatoes! I figured the broccoli would set it back in balance. Husband said it tasted like the good meatloaf he used to get as a kid (he doesn’t know it’s the healthier version).
