This is a quick and simple version of shepherd’s pie that my family like, not the conventional form with lamb.

Prep Time: 25 mins
Cook Time: 45 mins
Total Time: 1 hr 10 mins
Servings: 8
Yield: 8 servings

Ingredients

  1. 5 potatoes, peeled and quartered
  2. 1 pound lean ground beef
  3. 1 (4 ounce) can sliced mushrooms
  4. 1 (15 ounce) can mixed vegetables
  5. 1 (10.75 ounce) can condensed cream of mushroom soup
  6. 1 (10.75 ounce) can condensed cream of celery soup
  7. salt and pepper to taste
  8. 3 tablespoons butter

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C). Coat a 9×13 baking dish with cooking spray.
  2. Bring a large pot of salted water to a boil. Cook potatoes in boiling water until tender, about 15 minutes. Drain, reserving some of the cooking liquid. Mash potatoes with a little of the cooking liquid. Set aside.
  3. In a large skillet, cook ground beef until brown over medium-high heat. Drain fat from pan. Stir in mushrooms, mixed vegetables, mushroom soup, celery soup, and salt and pepper; heat through. Pour into prepared baking dish, cover with mashed potatoes, and dot with butter.
  4. Bake in preheated oven for 30 minutes, or until potatoes are golden and beef and vegetable mixture is hot and bubbly.

shepherds pie is not correct. it should be called cow pie as shepherds pie is made with ground lamb NOT beef THINK ABOUT IT

Better than Shepherd’s Pie in Ireland or my Irish ex-wife! I use cream-of-anything soup and I don’t peel the spuds. I also often add Italian sausage or even corned beef in addition to or instead of ground beef. Everybody loves it.

I have been making something very similar for many years. One very important difference: I saute a chopped onion along with the ground beef. This one simple addition may prevent the dish from tasting bland to some reviewers.

We liked it ok for the two of us before payday. It’s quick and easy. Obviously it would be better with all fresh vegetables, but I read it and cooked it, and liked it. If you are someone who marks recipes down because of what’s in them, shame on you. Read it before making it. If you add a seasonings, don’t mark it lower. Any recipe you can make your own, and enjoy, is a good recipe. If you muck it up, don’t blame the author.

Made the Shepherd’s Pie as directed. It is a delicious addition to add to my recipes.

I made the recipe as written..was salty..I did not add salt..but think next time I would use low sodium soup!!

I love this quick and easy recipe! I use this as a base and I like to make it Cajun style. I add jalapeño peppers and Creole spices to the meat. I like my potatoes extra rich, so I add cream cheese

We are trying to eat lower carb so I swapped mashed potatoes for a family sized mashed cauliflower. My husband is not overly fond of casserole type dishes, so at his request I also added bacon. Good way to get more veggies into us! Solid recipe that lends itself to personalization.

I used frozen mixed vegetables and added a layer of shredded cheddar cheese before I topped the mashed potatoes. Absolutely delicious! This was my first but it definitely won’t be my last. I’m sorry I didn’t serve this to my kids when they were growing up. It’s the perfect easy and filling meal.

Substitute ground beef for ground turkey sausage and I used 2lbs instead of 1.

Like any cook worth his/her salt, I adjusted the recipe to our tastes. I agree that those 5 potatoes need to be rather large. I used 9 potatoes. I also added some leftover diced up eggplant instead of the mushrooms, and a little bit more ground beef than the recipe called for. Loved it. The recipe gets a “5 Stars” as it is a great foundation for a delicious meal for a family – even if it’s just 2 old grandparents like us!

I read a lot of recipes for Sheperds Pie, and it leaves you with a sense of “whatever your family likes”. So, I did. I used strips of grilled steak, leftover from a bbq. Kids went to the garden and picked a vegetable each, so we used zucchini, baby carrots, red sweet bell pepper, and sugar snap peas. I made a beef broth gravy and mashed baby reds for the top and added a why Vermont cheddar with parmesan. We don’t measure a bulk dinner like this, we just add and cook! Our recipe was delish too. We don’t use salt, so pepper, garlic, and onion were our spices. However this dish isvmade, I honestly don’t think you can go wrong!

I added onions and garlic. Went in heavy with seasonings to give it some zip and it paid off. Really enjoyed the result.

Had leftover mashed potatoes from Christmas, so I added some butter and cheese to taste and the result was ABSOLUTELY AMAZING. I ate almost the entire pie myself.

Instead of just potatoes, salt, and water on top, I make full-on mashed potatoes with the works- butter, garlic, milk/cream/greek yogurt, YUM. Makes the dish AMAZING. I also replaced the ground beef with ground turkey, added a chopped onion, frozen mixed veggies instead of canned, plus some spinach.

This was a hearty dish made with simple pantry ingredients. Based on other reviewers’ comments, I sautéed fresh mushrooms, 2 cloves garlic, half an onion, and 2 stalks celery after I browned the beef, and prior to adding the remaining ingredients to the skillet. I also opted for frozen veggies instead of canned. I prepared the meal in the morning and refrigerated it until dinner time. It was ready to pop in the oven. I baked for 40 minutes uncovered to compensate for the cold casserole.

I made this for dinner last night but added a few things. I’ve never been one to follow the recipe to a ‘T’ Added sausage links (quartered), a zucchini, turmeric to the ground beef as it was cooking, with garlic, yellow onions and bacon! Cut the bacon into bits then fried it up on its own. Cooked the sausage in a toaster oven and combined everything together. Smoothed the potatoes on the top, covered with cheese. Baked for 15 min then put French fried onions on the top and cooked it for another another 15 or so. Family loved it, might have turned it into a casserole

I make this all the time. It is an absolute favorite for my family, which includes a very picky teenager. I don’t change the recipe at all.

Made per instructions except skipped the canned mushrooms (didn’t have on hand) & used 12″ cast iron skillet.
