Sheet Pan Fried Rice

Our favorite dish at the restaurant, featuring salty fried rice, crisp-tender veggie bits, and creamy Sriracha mayo. The rice cooks evenly all the way around on a sheet pan, which is easier than it is in a standard skillet. Additionally, it provides for a fun presentation and a very simple cleanup. If desired, incorporate cooked chicken or shrimp.

Ingredients

  1. ¼ cup mayonnaise
  2. 1 tablespoon Sriracha
  3. 2 teaspoons rice vinegar
  4. ½ cup diced onion
  5. ½ cup diced carrot
  6. 1 ½ tablespoons canola oil
  7. 5 cups cooked and cooled rice
  8. ½ teaspoon kosher salt
  9. ¼ teaspoon ground black pepper
  10. ¾ cup frozen peas
  11. 2 cloves garlic, minced
  12. 1 tablespoon soy sauce
  13. 4 large eggs
  14. 2 medium green onions, chopped

Instructions

  1. Set an oven rack in the center of the oven and preheat the oven’s broiler.
  2. Stir mayonnaise, Sriracha, and rice vinegar together in a small bowl until well combined.
  3. Toss onion and carrot with oil on a rimmed baking sheet until coated; arrange in a single layer.
  4. Broil in the preheated oven for 5 minutes.
  5. Add rice, salt, and pepper to the sheet pan and toss to coat.
  6. Broil until rice is just golden, 8 to 10 minutes, stirring halfway through.
  7. Add frozen peas, garlic, and soy sauce; toss to evenly coat and spread in an even layer. Use the back of a spoon to form 4 indentations in the rice mixture. Crack an egg into each indentation.
  8. Broil until egg whites are set, about 3 minutes.
  9. To serve, drizzle with Sriracha mayo and sprinkle with green onions.
  10. I used three 8.8-ounce packages of Ben’s Original(TM) Ready Rice(TM), prepared according to the package directions, and cooled.

Delicious and easy! Fun to add bits of leftovers or half-packages in freezer. I just used ground beef/sausage mixture and chopped broccoli from the freezer. Made a full, hearty meal.

This was a great idea!! I loved the crispy texture. I didn’t follow the ingredients exactly, but l will make it my new favorite for making fried rice. I added some pork, green beans and 1/2 tsp of sesame oil – or whatever you want. Was even better the next night. thx!!
