Ingredients
- 1 pound ground venison
- 1 egg
- 1 (4 ounce) packet saltine crackers, finely crushed
- ¼ cup barbecue sauce
- ½ yellow onion, chopped
- ½ teaspoon dried sage
- ½ teaspoon steak seasoning
- 2 tablespoons brown sugar
- 2 tablespoons Worcestershire sauce
- 3 slices bacon
- ¾ cup barbecue sauce
- 2 tablespoons brown sugar
- 1 tablespoon Worcestershire sauce
Instructions
- Preheat an oven to 350 degrees F (175 degrees C).
- Mix the venison, egg, cracker crumbs, 1/4 cup barbecue sauce, onion, sage, steak seasoning, 2 tablespoons brown sugar, and 2 tablespoons Worcestershire sauce in a mixing bowl with your hands until evenly combined. Pack into a 3×7-inch loaf pan, and lay the bacon strips over top.
- Bake in the preheated oven until no longer pink in the center and the bacon is crispy, about 35 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Meanwhile, stir 3/4 cup barbecue sauce, 2 tablespoons brown sugar, and 1 tablespoon Worcestershire sauce in a sauce pan over medium heat. Simmer 5 minutes, whisking constantly. Pour the sauce over the cooked meatloaf, and let rest 5 minutes before serving.

This was absolutely THE BEST use of our ground venison. Hubby loves it and i love it, too. I used a spicier BBQ sauce and only had about 1/3 of a cup left for the top layer. It was perfect. It doesn’t really need much sauce of the top, especially if you use ketchup on your meatloaf. This is a keeper recipe, for sure!

I made this dish and it was really good but as a suggestion, do not add brown sugar to the glaze…bbq sauce already has it in there and it was too sweet for my taste.

Turned out savory indeed and I will keep this recipe (in fact I’m re-making 2 of these meatloaves as we speak). However, my baking time was significantly longer than 35 minutes, closer to twice that time. I would recommend to use a food thermometer to ensure properly cooked meat until/unless you know your oven.
I have made this using venison, bear, elk, beef and ground turkey. It is awesome in every format.
I was pleasantly surprised this recipe and even more surprised that even my picky kids loved it! This recipe is a keeper!! The only thing I changed is for the sauce on top I used mostly ketchup with about 1/4 cup of bbq sauce just to make sure it wasn’t too spicy!
Hate meatloaf; always have. This recipe is SOOOOOOO freaking delicious!! I’m a convert, and my very picky kids are as well. It’s SO good that I even make it for company. Yep, you read that right! Company meatloaf!!!! Nineteen stars!! (Oh, and I’ve never written a review here before!)

This was delicious! I followed the recipe exactly, except there was no way I could fit it into such a small dish. I used a 5×9 glass dish. Also, I think it would be for more like 6 servings. It was very filling. This is how I will make meatloaf from now on. Thank you!
Absolutely delicious! I didn’t have steak seasoning so I used 3/8th tsp of adobo and 1/8 tsp of onion powder instead because the ingredients were similar to steak seasoning I googled. So tender and juicy. My husband loved it!
The reason I gave this dish 5 stars is because it was wow! Yummy! My hubby kept going to the kitchen and getting more……by the end of the evening, there was none left! Okay, there should have been some restraint exercised, but he loves venison anyhow and this recipe will definitely be going in the collection 🙂 No changes to recipe other than I didn’t have steak sauce so left it out and it was still great!

I made a bacon basket weave instead of only 3 pieces of bacon. I also used half the crackers and half the barbecue sauce. Was a huge success with the family. My wife didn’t even know that she was eating venison.

I am not a big fan of venison, but since hubby hunts I’m always looking for good recipes to help mask the game taste. This recipe hits it out of the park. He’s been eating it his whole life and LOVED this recipe. I followed exactly as written and it was really REALLY good. This is the best venison meatloaf I have made. It had so much flavor. All I cook is venison so I have made multiple meatloaf using venison. This is by far the best. My family agrees!
