Sausage and Pepper Penne

Make no mistake about this recipe’s name. Although it might not be the most beautiful cake you have ever seen, it is undoubtedly the most tasty! For a tea party, office luncheon, brunch, and dessert, I’ve made this. It’s a hit every time. paired with vanilla ice cream, delicious.

Ingredients

  1. 2 ½ cups dry penne pasta
  2. 4 ½ teaspoons coconut oil
  3. 1 pound smoked sausage (such as farmer’s sausage), sliced
  4. 1 onion, sliced
  5. 1 green bell pepper, sliced
  6. 1 red bell pepper, sliced
  7. 1 orange bell pepper, sliced
  8. 1 (8 ounce) package mushrooms, sliced (Optional)
  9. 1 (14.5 ounce) can diced tomatoes
  10. 1 (8 ounce) can tomato sauce
  11. 1 teaspoon minced garlic
  12. 1 teaspoon garlic powder
  13. 1 teaspoon dried oregano
  14. 1 teaspoon dried basil
  15. 1 teaspoon salt
  16. 1 teaspoon ground black pepper
  17. ½ teaspoon red pepper flakes (Optional)

Instructions

  1. Bring a large pot of lightly salted water to a boil; add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes.
  2. Heat oil in a large skillet over medium heat, and cook and stir sausage, onion, green bell pepper, red bell pepper, orange bell pepper, and mushrooms until vegetables are tender, about 10 minutes.
  3. Stir diced tomatoes, tomato sauce, minced garlic, garlic powder, oregano, basil, salt, black pepper, and red pepper flakes into vegetable mixture; bring to a simmer and cook, stirring occasionally, about 10 minutes.
  4. Drain pasta and spoon onto plates and top with sauce mixture.
  5. Farmer’s sausage, a traditional Mennonite smoked sausage, is well-known in Canada. If you cannot find it, you can use any sausage links.

The basic recipe is great. I used ground sausage as that’s what I had. I cooked that, then added fresh sliced mushrooms until the mushrooms were golden, then I added 1/2 a head of minced garlic (maybe two tablespoons) for about one minute, then set that aside. As soon as the pasta hit the water, I sautéed the peppers and onions until translucent, maybe 5 minutes and I used a large size cut. I then combined the pepper mixture with the sausage mixture and added the rest of the ingredients, omitting the garlic powder as there was enough fresh garlic. I also doubled the herbs. It simmered, covered, while the pasta cooked. You don’t need to cook it as long as the recipe calls for, and with less cooking you get a nice texture to the vegetables. This is yummy and a definite “keeper”! Thanks for a great base to work from.

This is very good. I used a chicken, pinapple sausage. I also used a large jar (Costco size) of spaghetti sauce instead of the tomato sauce and seasonings. I’ll make it again for sure.

I left out red pepper and minced garlic since I didn’t have, also left out mushrooms since I am not a fan. Used Greenwise Italian Chicke Sausage 12oz which was plenty. The red pepper definitely adds a kick.

This recipe was outstanding! I only had Trader Joe’s chicken sausage. Since there is no casing, I sliced the sausage into “pennies” and it turned out so delicious. Will definitely make it again and will use the same sausage…

This recipe is so good that I’ve hunted for 2 days to find it again. I’ll be writing it down and adding it to my recipe box this time. I used smoked sausage because I already had it and left out the mushrooms because we aren’t fans, but followed the rest to a T and the entire family ate it up! Quick, easy and delicious!

This was wonderful! I didn’t have a green pepper so I used a yellow and I was out of tomato sauce so I used crushed, it made the dish really creamy. The pasta I undercooked by a few minutes and added it to the pan, after draining it, with everything else to soak up the sauce. Thanks for sharing.

My family devoured this! We are not hot and spicy fans so I omitted the red pepper flakes. I also used 2 tsp of minced garlic and no garlic salt. I added 4 large handfuls of spinach, and a full 750ml jar of pasta sauce. I also drained the diced tomatoes so it wasn’t runny at all. It was quick, easy and a new family favourite!

Great recipe!! We didn’t use onion or red pepper flakes because we had spicy Italian sausage (and it was spicy!). Will do again using sweet Italian sausage and hopefully it won’t be as fire engine hot as this was.
