Too occupied to cook? With the help of a slow cooker and a can of beef broth, you can multitask while this pulled pork barbecue recipe cooks. A roast prepared “low and slow” can be easily torn with a fork. As an added bonus, you also receive fantastic stock for beef gravy! Serve with lots of coleslaw and your preferred barbecue sauce.

Ingredients

  1. 1 (5 pound) pork butt roast
  2. salt and pepper to taste
  3. 1 (14 ounce) can beef broth
  4. ¼ cup brewed coffee

Instructions

  1. Cut roast in half. Rub each half with salt and pepper, and place in the slow cooker. Pour broth and coffee over meat.
  2. Turn the slow cooker to Low, and cover it. Cook for 6 to 8 hours, or until the roast is fork-tender.
  3. Carefully remove the roast to a cutting board. Pull meat off the bone with a fork. You may also chop it with a cleaver afterward if you like it really finely cut.

Love how simple this is. It works great in an instant pot as well. Thawed I cook it approx an hour (15-16 mins per pound), but I often forget to get it out of the freezer 2 days in advance so I cook it frozen for 1 hour 45 mins. It is so versatile because you pick the bbq sauce of your choice. I’ve made this and then froze the pork once shredded for a grad party. It worked out great the day of the party and with multiple flavors of bbq sauce everyone was happy. Using this recipe now from my daughter’s wedding in 3 weeks.

I’ve made this several times, with delicious results every time. I was hesitant about adding coffee the first time. I shouldn’t have been. Add the coffee. The cut of meat is also important. Use the pork butt as suggested. The ONLY thing I change is length of time to cook. It could be my older crock pot, or just my preference,?but I generally leave it on for 12 hours.

This is now a “go to” family favorite that never fails. For the best flavor, use a pork roast with the bone in to get that extra goodness. On occasion will add a tablespoon of liquid smoke, but that’s up to personal preference. Besides the family dinner table, it’s an easy traveling dish for potlucks, funeral meals, feeding 4Hers, or little league groups.

I followed the recipe except I added 1 tsp. Of liquid smoke at the beginning. It was a little bland but nothing that can’t be fixed by adding your own touches to it. All in all a pretty good basic recipe.

All I can say is yum. So good. I followed as written once cooked I shredded it, and put it back in the slow cooker spooned some of the broth back in crock so meat wouldn’t try, and but bbq sauce. So good made this about 4x already always a hit.

This was a good base recipe for me. I like a smoky flavor, so I added 2 Tbsp liquid smoke, 1Tbsp Worcestershire sauce, and 1Tbsp each minced onion and minced garlic. I have an InstaPot pressure cooker, and I was on a time crunch, so I cooked it in my Pot. I sautéed it first, with salt & pepper, in a little olive oil, then poured in the liquid ingredients and spices. Since I had almost 10 lbs of meat, I cooked it on high pressure for 2 hours. So tender and juicy!!
