My mother came up with this idea for a spicy dish. It’s a simple, efficient, and delicious supper that will please practically everyone.

Ingredients

  1. 1 (14 ounce) package macaroni and cheese mix
  2. 1 ½ pounds ground beef
  3. ½ cup chopped green bell pepper
  4. ½ cup chopped onion
  5. 1 teaspoon salt (Optional)
  6. 1 teaspoon cayenne pepper (Optional)
  7. 1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
  8. 3 slices American cheese, or more to taste

Instructions

  1. Preheat the oven to 325 degrees F (165 degrees C).
  2. Bring a large pot of lightly salted water to a boil. Cook macaroni noodles, without the cheese powder packet, until almost tender and firm to the bite, about 7 minutes.
  3. In the meantime, heat a large skillet over medium-high heat. Add beef, bell pepper, and onion; cook until beef is browned and crumbly, 6 to 7 minutes. Season with salt and cayenne pepper. Drain and discard grease if desired.
  4. Drain macaroni and place in a casserole dish. Add the cheese powder packet, diced tomatoes with green chiles, and sauteed beef and vegetables. Stir well. Lay American cheese slices on top, covering filling as well as possible.
  5. Bake in the preheated oven until piping hot throughout and cheese is melted, 15 to 20 minutes. Let cool briefly before serving.
  6. If you would like, use the microwave to melt the cheese. It may take only 2 to 5 minutes for the cheese to start bubbling.

Needed to be creamier. And didn’t have alot of flavor except for the cayan pepper. My husband wasn’t a fan either. The flavor in a recipe should be real flavor no just hot spice.
