One of our go-to quick meals in my household is a Reuben sandwich. They are quite tasty and simple to make. Large bowls of hot vegetable soup and dill pickles on the side go well with them when I serve them.

Ingredients
- 8 slices rye bread
- ½ cup Thousand Island dressing
- 8 slices Swiss cheese
- 8 slices deli sliced corned beef
- 1 cup sauerkraut, drained
- 2 tablespoons butter, softened
Instructions
- Preheat a large griddle or skillet over medium heat.
- Spread one side of bread slices evenly with Thousand Island dressing. On four bread slices, layer one slice Swiss cheese, 2 slices corned beef, 1/4 cup sauerkraut, and a second slice of Swiss cheese. Top with remaining bread slices, dressing-side down. Butter the top of each sandwich.
- Place sandwiches, butter-side down on the preheated griddle; butter the top of each sandwich with remaining butter. Grill until both sides are golden brown, about 5 minutes per side. Serve hot.

I use same ingredients, when done browning keep in pan hot dump a splash of water in pan cover steam for extra flavor
Lose the butter. Instead use THIN layer of mayo to outside of bread.
WHen Chompies has the marble bread on sale ,buy 1 get 1 free I will purchase pastrami or corned beef to make. I also drain but not rinse the sauerkraut. lay out the precut foil and assemble. Thousand or miracle whip,I use a slice of meat on both sides of bread and slice of cheese on both, another slice of meat and some sauerkraut. put together fold in the foil and freeze except for a couple days worth. Thaw the day before in fridge, usually have to take inners out and warm in microwave the grill altogether in fry pan that sandwich is buttered on both outsides.
I’ve made this same recipe for years. Everyone loves it including me. I just ask for the meat to be “chip-chopped” instead of slices. I like to stack it that way. I grill in my old iron skillets and sit another on top the sandwich to create a “press” no need for a fancy gadget.
I love this sandwich, the only thing is that I am not a fan of Thousand Island or Russian dressing in general , so I usually just substitute the dressing out for mayo.

Definitely one of my favourite sandwiches on earth. If every ingredient is top quality, there’s nothing better out there. I have one complaint with this recipe however…there is no thousand island dressing on a Reuben. It’s Russian dressing. Big difference!! HAS to be Russian IMHO. Try it, I’m sure you’ll agree

I had left over corned beef and used that I stead of deli sliced and it turned out superb!! Loved it. And so very easy and better than Jason’s Deli- and that’s saying a lot!!
