Prime Rib – It’s Easier Than You Think

I was hesitant to prepare prime rib at first since it was expensive and I didn’t want to mess it up. Well, it turns out that making prime rib is simple, but a good thermometer is a need. The meat probably cost you $30 or more. If you don’t already have one, save your money and spend an additional $25 on a reliable thermometer with a probe and an alert. You can scale this recipe by adhering to the temperature guideline. Remove the bottom of the roast’s bones, and either serve them separately or keep them for another meal. If preferred, slice the roast and serve with creamy horseradish.

Ingredients

  1. 1 (5 pound) bone-in beef prime rib roast
  2. 1 tablespoon olive oil
  3. 2 teaspoons Montreal-style steak seasoning (such as McCormick®)
  4. 1 teaspoon chopped garlic
  5. 1 teaspoon Italian seasoning
  6. 1 teaspoon mustard powder

Instructions

  1. Place roast, bone side down, in a roasting pan.
  2. Mix olive oil, steak seasoning, garlic, Italian seasoning, and mustard powder together in a small bowl; spread over the roast. Allow roast to come to room temperature, about 45 minutes.
  3. Preheat oven to 450 degrees F (230 degrees C).
  4. Bake roast in the preheated oven for 20 minutes. Insert a meat thermometer in the thickest part of the roast away from the bone.
  5. Reduce oven temperature to 325 degrees F (165 degrees C). Continue to cook in the oven to your desired degree of doneness, or an internal temperature of 145 degrees F (65 degrees C) for medium, about 1 1/2 to 2 hours. Remove from the oven, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area 10 to 15 minutes before slicing.

Best recipe ever! I had a 7.5 lb 4 rib roast and it was perfectly cooked to medium. Just the right amount of seasonings. I have an older gas oven so I was nervous but I followed the recipe and after the first 20 minutes turned the oven down and continued cooking for 2 1/2 hours. My husband was delighted. I’ll definitely do this again.

This is, I believe, the first time I’ve ever tried to make a standing rib roast. I used a 3.5 lbs bone in roast, as there were only 4 f us for dinner. I used a roasted garlic and EVOO paste instead of separate ingredients. 20 min at 450F and 90 min at 325F yielded a more medium than med-rare roast 🙁 . I also added chunked carrots and potatoes around the roast at about 15 min into the 325F time. That was a mistake. I should have tossed the veggies in oil, instead of just salt and pepper. The meat was delicious, but I could have used better info on the timing.

This was really easy and turned out amazing!!! I’ll be making this more often now. I cooked at the lower temp for 1.5 hours and let rest for 30 mins it was perfect medium rare.

Easy, and came out perfect. We like it medium rare, and it was perfect all the way through – not too rare, not too medium. I did roast it at 325 for an hour and 25 minutes (a little shorter than the recipe), and the thermometer read ‘rare” but after letting it sit for ten minutes, it was just right.

Very easy to make. I didn’t have Montreal or Italian seasoning but I used similar seasonings. In addition, I inserted garlic cloves around the roast. I cooked it for a total of 1 3/4 hours and it came out perfect! It is definitely a keeper.

Oh my, this is the BEST beef roast I have ever made. Juicy and a perfect medium rare that my husband even enjoyed (he prefers his beef on the more medium/well-done side of the cooking spectrum – killing the beef a second time, I know). I made absolutely NO CHANGES to this recipe except to cook 15 minutes longer. If you like it RARE, use the current times; we prefer medium, thus, I added 15 minutes to cook to our preference. The spices compliment the roast perfectly! There was NO CONVERSATION at the table except many “Mmmmm”‘s!!
