Ingredients
- 1 teaspoon garlic powder, or to taste
- salt and pepper to taste
- 6 pounds pork butt roast
- 2 onion, sliced
- 20 new potatoes, raw
- 16 carrots, peeled
- 2 cups mushrooms, halved
Instructions
- Preheat the oven to 350 degrees F (175 degrees C).
- Heat a large frying pan over medium-high heat. Sprinkle garlic powder, salt, and pepper over pork roast; rub into meat. Sear meat on all sides in the hot pan until lightly brown. Transfer to a roasting pan.
- Place onion slices over meat and in the roasting pan. Fill the roasting pan 2/3 full with water.
- Cover and bake in the preheated oven for 3 hours. Add potatoes and carrots; cover and continue baking for 45 minutes. Add mushrooms and bake, covered, for another 15 minutes. Remove and let stand at least 10 minutes before serving.

Very bland. Reading the recipe I knew it would be, but opted to try it as written. For the leftovers, there was a lot since my whole family found it flavorless, I added ½ tablespoon Paprika – 2 teaspoons Thyme – 2 teaspoons Celery seed – 1 teaspoon Oregano – ¼ teaspoon Rosemary – ¼ teaspoon Cayenne Pepper – 8oz of dark beer, then simmered it for an hour. They all loved the leftovers.
So tender, you don’t need a knife… The only thing I did different was I used Louisiana Seasoning when I seared it, which gave it a nice blackened appeal. I substituted carrots with brussel sprouts.

Didn’t use any broth or H20 but made my own rub consisting of mustard, olive oil, worcestershire, oregano and fresh chopped garlic. Tender!!!
Love this recipe! It was simple to make and delicious. I wanted a recipe that the meat didn’t fall apart but was very tender and had a great flavor. This recipe is my go to for a roast.

Unbelievable!, This was so easy to prepare,,, my wife loved it and had both of my kids over they loved it, did not change the recipe at all, did it exactly like the recipe said it turned out perfect!
I followed the recipe as written with the following exceptions: omitted the water and used chicken stock, white potatoes, garlic cloves and seasoned generously after reading other reviews then placed everything in a slower cooker for seven hours. The meat was falling apart, I will definitely make this again.

I made this exactly as described, minus the mushrooms with celery in it’s place ! It was absolutely delicious ! Tender, flavorful pork butt ! Oh, I did put the carrots in an hour before the rest of the vegetables though ( at the 2 hr. mark instead of the 3 hr. mark ).
No changes and yes I will make it again.
So good! The only changes I made was using 4 cups chicken broth instead of water and omitting the mushrooms because I don’t like them. I will definitely be making this again!
I cooked this in a crock pot on high for a little over 7 hours. I used Montreal Seasoning instead of listed seasonings. I used 2 small cans of sliced mushrooms, no carrots, 1 big onion, 20 baby potatoes and chicken bone broth. I probably should have trimmed some of the fat off the meat before searing it, but it was still very tender and tasty.

I guess you CAN teach old dogs new tricks! When I made this this evening, I used Montreal Steak Seasoning and chicken stock, as previously suggested, in a Dutch Oven (browned and roasted in one pot). Added potatoes, celery, and carrots. Also threw in some sweet potatoes the last half hour. This is the BEST pork roast I’ve ever had. My husband said he thinks he’ll keep me around for another week! Woohoo.

I’ve never made a pork roast before. I made it exactly as directed minus the mushrooms. My boyfriend doesn’t really like pork and is very picky and even he said it was “delicious”!! I’m keeping this as a favorite!!
