Poppy Seed Chicken Casserole

Raspberry and rose go so well together! I’ve tried it in turnovers and cookies, and I recently made the decision to modify a scone recipe to include both. Along with some floral tea, these are beautiful. For a lovely display, scatter dried rose petals over the top.

Ingredients

  1. 4 skinless, boneless chicken breast halves
  2. 1 sleeve buttery round crackers (such as Ritz®), crushed
  3. ½ cup butter, melted
  4. 1 teaspoon poppy seeds, or more if desired
  5. 1 (10.75 ounce) can condensed cream of chicken soup
  6. 1 (8 ounce) container sour cream
  7. 2 cups shredded Cheddar cheese

Instructions

  1. Place chicken breasts into a large pot; cover with water and bring to a boil over high heat. Reduce heat to medium, cover, and simmer until chicken is no longer pink in the center, about 20 minutes. Drain; shred chicken with two forks.
  2. Preheat the oven to 350 degrees F (175 degrees C). Mix crackers, melted butter, and poppy seeds together in a large bowl until combined; set aside.
  3. Stir condensed soup and sour cream together in a medium bowl; pour 1/2 of the mixture into a 9-nch square baking dish. Add shredded chicken in an even layer; top with remaining soup mixture. Sprinkle with Cheddar cheese, then top with cracker mixture.
  4. Bake in the preheated oven until cheese has melted and the sauce is bubbly, 25 to 30 minutes.

I grew up on this and decided to start making it myself. I use a cooked Rotisserie chicken from the grocery store as my chicken soo I don’t have to cook it. Just shread the whole bird. Since its a whole bird, it’ll require 2 cans of cream of chicken. I personally top it with 3 sleeves of crackers.

Have been making this for many years, but never with cheese. Asked family and all agreed no cheese. Im sure it would add another layer of deliciousness. I recently have been using the breast of Costco Rotisserie chicken that I shred. Quick and so easy!

This really is a good recipe….needed pepper for us. The old school recipes do not call for shredded cheese so i do not usually use it. Cut the butter in half and add a can of cream of celery soup for more flavor and sauce for the chicken (and rice if you serve this on top of it)) Also, don’t add the poppy seeds to the cracker mix, add it to your condensed soup mix instead so you get more of the flavor and look of poppy seed chicken. Sprinkle some on top of course before baking. Still, this one is a keeper over-all.

Absolutely a good recipe. I did follow it but I want to provide a couple clarifications. With the world and changing packaging . So for one sleeve of buttery round crackers please use 32 to 36 crackers. Also the recipe calls for four skinless boneless chicken breast tabs. Mine were very very large so I would suggest quantifying this by ounces but I don’t know how many. I also made a mistake when I put the recipe together instead of layering the sauce and then the chicken in the sauce, I mixed it all together and it was absolutely fantastic. Those of you that have a KitchenAid mixer I just threw the hot cooked chicken breasts in that to shred it and then I threw in the soups and the sour cream and it made it very easy. Excellent dish. We had it with rice
