Peanut Butter and Apple Sandwich

My children enjoy spreading peanut butter on their apples, so one day I thought I’d take one of their favorites and slightly alter it, and presto: a peanut butter and apple sandwich. This offers a healthy substitute for PB and J, which can get monotonous after a while.

Ingredients

  1. 2 slices whole wheat bread
  2. 1 tablespoon peanut butter, or to taste
  3. 1 small apple – peeled, cored and shredded

Instructions

  1. Spread a thin layer of peanut butter onto one side of each slice of bread. Place shredded apple onto the peanut butter, and place the other peanut buttered side of bread on top. Serve immediately.

I made this with shredded apple as called for in the recipe. The texture was a little weird and pieces kept falling out. I believe it would be much better with thin slices of apple. I sprinkled a little cinnamon on the 2nd half of mine, and that was good on it.

As a kid we did something like this but we used apple butter since my mom would can EVERYTHING lol I still can apple butter. Just beats the heck out of store bought.

These were very good. They inspired me to try some other variations. I shredded the apples (helps to press or squeeze the apples a bit to remove some of the moisture), and stir them into the peanut butter. From there, you can take this recipe to a lot of places depending on the preferences of your family. You can stir in one or a combination of the following: raisins or sweetened dried cranberries, mini chocolate chips, nuts, honey, chocolate or hazelnut spread, or even crumbled bacon. These are terrific stuffed into mini pita breads to make tiny sandwiches that won’t fall apart.

I used half of a larger apple and left the skin on. I just sliced it really thin and stacked it onto the sandwich. I love this combination of flavors!

Other suggestions: bananas with peanut butter or apples with cheese (I’d recommend cheddar for kids, but brie is good, too).

I have have eaten this in the past, and I will again soon, apples and bananas are at their peak in Australia at the moment. One thing I would look at seriously is NOT peeling the apple, just wash and slice it, most of the goodnes and fibre is in the skin.

Finally, a sandwich that I can eat. I love apples, but unfortunately because of a denture problem, cannot eat them. I also love peanut butter. This is a perfect solution. No…applesauce does not fulfill the taste of a fresh apple.

My 3 year old really enjoyed these! I didn’t shred the apple, instead I cut them into very thin slices because they where a little bigger and wouldn’t fall off his sandwich as easily. I also used crunchy peanut butter to give it even more texture! I will be making these again. They are a great snack!

My boyfriend loves this. If I make his lunch the night before, I usually put a little lemon juice on the apple, and often try little variations, such as adding cinnamon & cranberries or walnuts, or a little fluff and banana, etc.

I originally made this for my boys to see if I could find a way to get them to eat peanut butter. I got one to but the other still wasn’t interested. I, however, loved it. I’ll be making it again for myself. lol
