Ingredients
- ¾ cup Thousand Island dressing
- 8 slices rye bread
- 1 (16 ounce) can sauerkraut, drained
- 8 slices Swiss cheese
- 8 slices pastrami
- ¼ cup margarine, softened
Instructions
- Spread dressing onto one side of each bread slice. Top 1/2 of the slices with sauerkraut, Swiss cheese, and pastrami, then top with remaining bread, dressing-side down. Spread margarine on the outside of each sandwich.
- Heat a large skillet over medium-high heat. Grill sandwiches in the hot skillet until bread is golden brown, fillings are hot, and cheese is melted, 3 to 5 minutes per side.

Ingredients and prep as described. Instead of toasting it in a pan, I buttered both sides and set it in my Foreman Grill until toasted as desired.

This is actually just called a “Pastrami Reuben Sandwich”. Since “The Rachel Sandwich” (aka Roast Turkey Reuben Sandwich) actually uses slices of roast turkey, coleslaw and Russian dressing. However, in the end all that counts is that you like the sandwich you made for yourself to eat.
This recipe turned out amazing! Unfortunately did not have any rye bread I had to used wheat. But I love rye bread so it would have just made it more amazing I would definitely make this again!

I ate it so quick I forgot to get a picture. I tweaked a few things and it was amazing. I used dill rye bread, havarti cheese and since I didn’t have thousand Island dressing, I made my own by mixing ketchup and mayo. It was a spectacular sandwich.
I’ve made these both ways, corned beef or pastrami. However for the sauerkraut I first saute chopped onions in butter, then add the drained sauerkraut and warm. Family also uses it for hot dogs so I make up a bunch to chill for later
Very easy to make and if you have a George Foreman or pinnani grill, even better. Feel free to add a few raw onion slices in 20th that sourkraut if you love inions.

Absolutely love this sandwich! I did make my own thousand island dressing, just using ketchup, mayo, mustard, salt and pepper. Made it for my friends visiting from France, and they requested it 2 days in a row. So yummy!!
Excellent recipe! I made a 1/2 recipe.
I made this recipe two times, Once in a frying pan and once in my panini press. Both ways yielded perfect results, and took about the same amount of time. I recommend using sliced swiss cheese, and not shredded. The first time I only had shredded. It works but is messy and harder to flip. I also recommend putting a slice of cheese on the top and the bottom because the sandwich sticks together better. We loved this, and I’ll make it many times in the future!

Store does not carry pastrami any longer, so I used corned beef shaved! It was the best Ruben I have ever had!!!
I used 3 small slices of rue, they were about half of the size of a regular slice of bread. On 1st slice I put the pastrami on top of the thousand island dressing with sauerkraut on top. On the 2nd sli i put saurkraut. I’m the 3rd slice I placed the Swiss cheese folded in half. Once they are crispy and golden brown take them off of the heat and later them, 1st on bottom, 2nd in the middle and 3rd on top.
