One-Pot Taco Spaghetti

For a busy weeknight, make this flavorful one-pan taco spaghetti!

Ingredients

  1. 1 tablespoon olive oil
  2. 1 medium onion, diced
  3. 4 tablespoons dry taco seasoning mix
  4. 1 teaspoon garlic powder
  5. 1 teaspoon onion powder
  6. ½ teaspoon paprika
  7. 1 (10 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
  8. 1 pound 80% lean ground beef
  9. 1 (16 ounce) package dry spaghetti
  10. 1 (32 ounce) container chicken broth
  11. 1 cup water
  12. 1 (10.5 ounce) can cream of chicken soup
  13. 1 cup shredded Cheddar cheese
  14. ¼ (8 ounce) package processed cheese food (such as Velveeta®), thinly sliced

Instructions

  1. Heat olive oil in a pot over medium heat; stir in diced onion, taco seasoning, garlic powder, and paprika. Sauté, stirring occasionally, for 2 minutes.
  2. Pour in diced tomatoes with green chilies and sauté for 3 minutes, stirring occasionally.
  3. Add ground beef. Break apart into small pieces and cook until meat is a little more than halfway cooked through, about 5 minutes.
  4. Break spaghetti noodles in half and add to the pot. Add chicken broth and water. Bring to a boil. Cover pot with a lid.
  5. Cook pasta until tender, yet firm to the bite, 7 to 12 minutes. Mix in cream of chicken soup. Cook for 5 minutes, then reduce heat to low. Add shredded Cheddar cheese; mix in.
  6. Add one slice of Velveeta® per person, or 4 around the outside and 1 in the middle.
  7. Turn off the heat and cover the pot until cheese starts to melt. Serve.

Only change was that I added a red bell pepper chopped and used angel hair pasta vs spaghetti. I thought the steps were a bit odd (sauté onions, add Rotel, THEN add ground beef?) – but!! It all worked! And worked well! This makes A LOT! Rather than futz with thinly slicing Velveeta, use Kraft cheese slices next time. And while I thought 4 TBLS of taco seasoning was a lot – the end product could have use more taco flavor – the chicken broth cooks that taco flavor down. Maybe next time I will add a can of diced green chiles or jalapeños for some heat. Overall- really like this and would make again! Thanks Karla!
