Mom’s Classic Reuben

This is a recipe that my mother has always slightly altered from the standard Reuben. Since we don’t like tiny sandwiches, I usually “load” it. It is quite popular; my husband, kids, and friends all adore it!

Ingredients

  1. 12 slices light rye bread with caraway seeds
  2. 6 tablespoons margarine, softened
  3. 2 pounds deli sliced corned beef
  4. 1 ½ pounds thinly sliced deli chicken breast
  5. 1 pound sliced Muenster cheese
  6. 1 (16 ounce) jar sauerkraut, rinsed and well drained
  7. ¼ cup creamy salad dressing, e.g. Miracle Whip ™

Instructions

  1. Spread margarine onto one side of each slice of bread. Set a large skillet over low heat, and lay 6 bread slices in it with the butter side down. If you can’t fit 6, just fry in batches of 3.
  2. Place slices of cheese onto the bread in the skillet and let cook until the cheese starts to melt. Place slices of corned beef and chicken over the cheese, and then sauerkraut. Spread the creamy dressing onto the dry sides of the remaining slices of bread. Place dressing side down onto the sandwiches.
  3. Increase the heat to medium, and cook until browned on the bottom. Turn sandwiches over, and cook until golden on the other side.

This was fabulous! I used sourdough bread instead of rye and my husband said it was the best rueben he’s ever had. It was perfect!

This was very good. I like it alot better than the traditional reuben and I really like Reubens ! I used pastrami in place of the corned beef because that is what I had on hand. Will absolutely make again. My kids even liked it and they are not big reuben lovers. Thanks Mom ! It was Great.

This is a delicious recipe. I used low fat Thousand Island dressing and sprinkled lemon pepper on the buttered outsides of the sandwich before grilling– my husband LOVES this sandwich.

My son-in-law made this and everyone seemed like it, but the sodium content was much too high for my reduced sodium blood pressure diet. What a shame.

Yes Robin, this is truly a man’s man kind of sandwich! I too used Thousand Island dressing in lieu of the Miracle Whip and it added the tang that’s typically associated with a reuben sandwich. Your mom did a great job and we thank her!!

my original recipe stated to use sandwich spread, more like thousand island. I think you will find this makes it better than the Miracle Whip.
