Ingredients

  1. 1 onion, thinly sliced
  2. 6 cloves garlic, peeled
  3. 2 (14 ounce) cans beef broth
  4. 1 (18 ounce) bottle barbecue sauce
  5. ⅓ cup brown sugar
  6. ⅓ cup cider vinegar
  7. ½ teaspoon ground black pepper
  8. 1 (4 pound) Boston butt pork shoulder roast
  9. 3 tablespoons water
  10. 2 tablespoons cornstarch

Instructions

  1. Spread onion slices and garlic cloves in the bottom of a slow cooker. Stir in beef broth, barbecue sauce, brown sugar, cider vinegar, and pepper. Add pork roast.
  2. Cover and cook on Low for 6 to 8 hours. Remove pork from the slow cooker. Strain juices and return to the slow cooker. Mix together water and cornstarch in a small bowl; stir into juices until sauce is thickened.

Delicious! I followed the recipe almost exactly. I rubbed the roast with a little bit of vegetable oil and sprinkled some Butt Rub on it. I also added a bit of liquid smoke to the other ingredients, which I did mix together and then poured over the meat. I did quarter the roast to make it easier to pull apart when it was done. Cooked on low in the slow cooker for about 7 hours. I used a small bit of the sauce and thickened it with cornstarch and water. Then mixed everything together and put on toasted buttered rolls. A keeper!!

Great flavor! But wasn’t done to “pull” consistency after 7 hours on low. Would have helped if I had cut the pork butt into several pieces before putting it into crock pot. I’m going to make this again!

This was delicious. I totally followed the recipe. The sauce did not thicken but it didn’t bother the taste. Next time, I will heat the sauce in a pot on the stove until it thickens then add the pulled meat back in.

I decided to make it in my pressure cooker set to slow cook. I cooked it for 9 hours. It came out better than I could have hoped. Super tender and served on potato rolls. Will definitely do it again.
