Mediterranean Meatballs

Greece is one of the 22 nations that border the Mediterranean Sea. These meatballs are made from ground beef and are seasoned with fresh herbs, garlic, and other ingredients that may bring to mind Greek cuisine. Use these meatballs as an appetizer or serve them with lettuce, tomato, and pita bread. In either scenario, make sure to serve with lots of tzatziki, whether you buy it or prepare it yourself using a recipe from this website.

Ingredients

  1. 2 pounds extra lean (at least 90%) ground beef
  2. 1 large egg, beaten
  3. ⅔ cup plain dry bread crumbs
  4. ⅔ cup minced onion
  5. 2 cloves garlic, minced
  6. 1 tablespoon minced fresh rosemary
  7. ¼ cup minced fresh parsley
  8. 1 tablespoon minced fresh oregano
  9. 1 tablespoon minced fresh dill
  10. 1 teaspoon ground coriander
  11. 1 ½ teaspoons kosher salt, or to taste
  12. 1 teaspoon freshly ground black pepper, or to taste
  13. olive oil cooking spray
  14. chopped fresh parsley (Optional)

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Line a sheet pan with parchment paper or foil.
  2. Combine ground beef, egg, bread crumbs, onion, garlic, rosemary, parsley, oregano, dill, coriander, salt, and pepper in a large bowl. Mix using your hands until just blended.
  3. Form meat mixture into balls, about 1 1/2 inches diameter, and place onto the prepared pan.
  4. Spray meatballs with cooking spray, place in the preheated oven, and bake until the meatballs are browned and no longer pink in the center, about 40 minutes.
  5. Remove meatballs from the oven and allow to cool slightly on a paper towel lined plate. Garnish with additional fresh parsley for serving.
  6. If you like, use food-grade disposable gloves for mixing.

Recipe is good as written, except that I only cooked for 35 minutes and it was plenty. Yielded 38 meatballs. Haven’t tried with the tzatziki sauce yet, but they are excellent fresh from the oven! – August 2022
