One of my favorite recipes for making in advance is curry chicken salad for a week’s worth of simple yet delectable meals. This dish is incredibly tasty and has wonderful texture throughout. You may enjoy this chicken salad in a variety of different ways, including sandwiches, salads, lettuce cups, cucumbers, various vegetables, dipping pita, bread, and even straight from the container! You may also serve curry chicken salad as a delicious party appetizer by spooning it into little cucumber cups, finger sandwiches, or crackers.

Ingredients
- 1 ½ pounds ground beef
- 2 eggs, beaten
- ¼ cup ketchup
- ¾ cup herb-seasoned dry bread stuffing mix
- ½ (1 ounce) package dry Ranch-style dressing mix
- 1 (6 ounce) can French-fried onions
Instructions
- Preheat the oven to 350 degrees F (175 degrees C).
- In a large bowl, combine meat, eggs, ketchup, stuffing mix, ranch dressing mix, and fried onions.
- Shape into loaf and fit into a 9×5-inch loaf pan.
- Bake, covered loosely with foil about 50 to 60 minutes, or until meat is thoroughly cooked.

I’ve made this so many times and it has never disappointed. I’ve done it exactly as it says, and I’ve added garlic, swopped out the crackers for breadcrumbs, great either way. Superbly scrumptious meatloaf!!!!!
I have been making this recipe for years and my family LOVES it! I have tried a few others over this time and none of them even remotely compare to this recipe.
Ice been making this for over a decade now. I do lb beef and 1/2 lb ground pork. I season with seasoning salt pepper garlic powder. I also use almost whole packet of ranch seasoning. I also sometimes add bell pepper if on hand. FOR glaze I mix up ketchup lemon juice s&p and brown sugar Which i top loaf with on last 10-15 mins
This turned out OK but it was a little to bulky for my tastes. I may try it again with about half of the fried onions. I also think it could use a little kick from something like a little soy or worscheister. Just my opinion, thanks for it though.
Pretty good but a little disappointed that I couldn’t really taste the stuffing mix. I also used some bottled ranch dressing instead and some pepper.

Whisking together the ingredients PRIOR to mixing in with the ground beef will naturally THICKEN and help bind the loaf nicely for baking–DO NOT THIN OUT W/ WATER. Made this a 2nd time as per directions: WONDERFUL comfort food–nice for early Fall season! And my 3rd time w/ this recipe, I added shredded cheese, sliced mushrooms, diced green and red peppers–and earned the 5th star!!
This meatloaf is a “show stopper”. I have had so many compliments. My husband said it’s even better than his mom’s. She loves it too! Delicious!!!
Ingredients proportions seemed way off. I would like to try this recipe again because it’s simple and straighforward, but I will rely on my instincts to make adjustments accordingly.

I love the flavor of this meat loaf. It’s different than any I have made. It holds together well but is not dry either.
This is a great recipe! My husbands and I favorite meatloaf. The only thing I change is I add Worcestershire sauce. We make the night before, refrigerate overnight and slice it up and cook on the grill with our favorite bbq sauce to “blacken”it. It is fantastic!
This was really delicious! I used 2 lbs ground beef and the entire envelope of Ranch dressing mix. Will make again.
Very tasty. I made one change due to a mistake. I forgot to add the Ranch dressing on one of the meatloaves, so I mixed it into a couple of tablespoons of catsup and made a glaze. It made the unglazed meat a bit more bland, but the top part was excellently Ranchy.
Interesting mix of ingredients which is what led me to try it, but I felt this recipe was nothing exceptional and surprisingly rather bland…. The only thing that saved it was my go to recipe for a meatloaf glaze: 3 tablespoons ketchup, 1.5 tablespoons honey and 1/2 teaspoon Worcestershire. Thank you Stephanie for the submission.
Yummy! Made this for a ladies retreat, it got rave reviews. I added a little some garlic and onion powder, but otherwise followed the recipe. Will definitely make again. UPDATE: Love this recipe! I make them in an 8-mini Loaf pan! So good for dinner, even better for leftovers as a sandwich! Quick and easy to prepare, you can’t go wrong
This turned out great for our family. My husband LOVES meatloaf and he’s requested this twice already since I made it initially a month ago. My Mom’s meatloaf was always a hit or a miss (and she also LOVES meatloaf) so I made this for her and the rest of the family and she was impressed and immediately asked for the recipe. I did make a couple minor changes and that was using the whole packet of ranch dressing (just because I wasn’t sure if we’d end up liking it and didn’t want to have 1/2 a packet floating around or waste it) and I only had a partial can of dried french onions. Other than that I stuck to the recipe. I plan on deleting all the other meatloaves I’ve stuck in my recipe box because this one is the winner in my book!
This is the only meatloaf I’ll make from now on! I added a ketchup, Worcestershire sauce, and BBQ sauce glaze, then topped with some of the french fried onions. Also only used about half the onions in the meatloaf mixture.
