The family enjoyed this chocolate and peanut butter bark recipe that I just recently attempted. It’s referred to as Reese’s peanut butter bark! It’s really great!

Ingredients
- 1 pound ground beef
- 1 ½ cups medium salsa
- ¼ cup grated Parmesan cheese
- ¼ cup shredded Monterey Jack cheese
- 1 egg
- 1 cup crushed saltine crackers
Instructions
- Preheat oven to 350 degrees F (175 degrees C). Grease a 9×5 inch loaf pan.
- In a large bowl, mix together ground beef, salsa, cheese, egg, and cracker crumbs. Form into a loaf, and place in prepared pan.
- Bake for approximately 1 hour, or until done. Internal temperature should measure at least 160 degrees F (70 degrees C), the meat should be browned through, and the juices clear.

SO loved it! I used pepper jack instead of the regular Monterey Jack as we love spicy. I’ve added this to my regular rotation and replaced my old meatloaf recipe. YUM!
Overall a winner in our house. It is a perfect amount for 4-5 people. I used only one cup of salsa and added just a little bit more cheese on top too. Will definitely make this again.
Oh, I made it alright! For twenty years, I’ve made it! I changed it, for myself. I substituted ground turkey, and because the turkey is lighter in flavor, I used the extra-mild salsa (not always easy to find) and chunky-style. Makes for terrific and thick-cut meatloaf sandwiches.
Excellent flavor! The meatloaf was moist — I had it hot and made sandwiches the next day!

I’m not a meatloaf person, but this was delicious! The husband and kids ate it all. I used only 1 cup of salsa. I subbed 1/2 cup Colby jack cheese for the two cheeses listed. Added cumin, garlic salt and steak seasonings. Plus a dash A1 steak sauce. Will definitely make again and again!!

My husband loved this meatloaf, saying it was the moistest meatloaf he’s ever had. I substituted the saltines for stuffing cubes which were so good in it.

This is one of the best meatloafs ever! Different from the traditional. I used chunky salsa and it complimented it very with the chunks of green peppers, onion and tomatoes. I also added in a few splashes of tobacco sauce. My daughter said this is a keeper and need to make it once a week.
Very good I used Rotel and added one shredded carrot and 1/2 a chopped onion. Also added some Garlic. Will make again for sure.
A nice twist on meatloaf. I used homemade salsa in the recipe and spicy saltine crackers. It held together and cut in slices very nicely. I served ‘Creamy Kale Salad’ and ‘Cottage Noodles and Cabbage’ both from AR with this meatloaf.
it was very good!, the only thing i changed was i substituted the crackers for nacho chips!
this is a great recipe but i also add 1/2 the meat in the pan and then put shredded cheddar cheese in between and sometimes i use med/hot salsa in with the mixture gives it an extra bite
Me and my boys (yes even the husband) LOVE this meatloaf!! I dont get groans anymore when I announce we are having it!!! The only thing i change is that I use my own homemade salsa instead of store bought!!!
I made too much! Doubled the recipe, so it had to cook longer. It was too spicy for me, but my man is Texmex, and he LOVED it. Will make again.
