Ingredients

  1. 1 pound ground beef
  2. 1 cup crushed saltine crackers
  3. ½ cup chopped onion
  4. ½ cup chopped green bell pepper
  5. ⅓ cup milk
  6. 1 egg
  7. 1 tablespoon Worcestershire sauce
  8. 2 cloves garlic, chopped
  9. 1 teaspoon ground black pepper
  10. 1 teaspoon seasoned salt
  11. ½ cup ketchup
  12. ½ cup brown sugar
  13. 4 cups mashed potatoes
  14. 1 cup shredded Cheddar cheese

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Mix ground beef, saltine crackers, onion, green bell pepper, milk, egg, Worcestershire sauce, garlic, black pepper, and seasoned salt together in a bowl.
  3. Stir ketchup and brown sugar together in a bowl. Spoon ketchup mixture into the bottom of each muffin cup of a 6-cup muffin tin.
  4. Fill muffin cups with beef mixture, leaving 1/2-inch space on the top.
  5. Bake in the preheated oven until no longer pink in the center, about 30 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Drain fat from muffin cups.
  6. Top each ‘cupcake’ with mashed potatoes and Cheddar cheese.
  7. Continue baking until cheese is melted, about 10 minutes.

Made and enjoyed it. It was fun. 2 changes I made was I did not make it in tins so I did not use the ketchup and brown sugar. I also used panko instead of crackers. It came out great and shared it with the family and they got a good laugh out of it but also enjoyed it. With make it again.

my mother made these 4 us when I was a kid. except she would put a spoonful of mashed potatoes on top make an indent with the spoon and put peas carrots or corn in the indent for birds nests! I carried on the tradition for my kids now my daughter does them for her kids!

I didnt use the onions and peppers in the mix, I used an onion and pepper jelly with ketchup. Excellent… the 10 yr old had 3 🙂

I loved making this for April Fool’s Day! I used BBQ sauce inside the cupcake liners. I also used my cake decorating tools to make the mashed potatoes look like real frosting.

I made this for dinner this evening and my husband and friend loved them. I substituted 99% fat free ground turkey And used a bit less brown sugar. Also put the cheddar cheese directly on the turkey loaf before adding the mashed potatoes. Moist & Delicious. I will definitely be making these, again! Uploaded three photos in the tin, on the plate with Asparagus, & one cut into. Lavender mashed potatoes on top.

These were really good. We used cupcake liners, and didn’t fill them to the top since the recipe said to leave 1/2 inch of space at the top. Next time, I’ll probably fill them the whole way since they didn’t stick to the cupcake liners and ended up sliding around in there a ton. We quadrupled the recipe and it ended up making 36 instead of 24. We used the top eater mashed potato recipe on this site, and piping the potatoes with a pastry bag and a large tip made the top look really good.

What a fun meal for the little ones. I didn’t want to add colouring so I sautéed finely chopped red peppers and green onion bits and sprinkled on to make them look Christmas like. Also added finely chopped red peppers, green onions and grated carrots to meat for colour instead of chopped onion.
