This mashed potato-topped turkey pot pie is a wonderful and delicious way to use up leftover chicken or turkey.

Ingredients
- 1 pastry for a single pie crust
- 4 cups cubed cooked turkey
- 1 (10.75 ounce) can condensed cream of chicken soup
- 2 cups water, divided
- 2 (1.2 ounce) packages turkey gravy mix
- 1 (16 ounce) package frozen mixed vegetables
- 4 cups mashed potatoes
Instructions
- Preheat the oven to 375 degrees F (190 degrees C).
- Press pie crust into the bottom of a 9×13-inch baking dish, then layer turkey meat over crust; spoon cream of chicken soup over turkey.
- Bring 1 cup of water to a boil in a saucepan over medium heat and stir in mixed vegetables; cook until vegetables are tender, about 5 minutes. Whisk dry gravy mix with remaining 1 cup of water, then stir gravy mixture into mixed vegetables. Bring to a boil, then simmer until thickened, about 1 minute. Pour vegetables and gravy over cream of chicken soup layer in the pan. Spread mashed potatoes over the top of pie.
- Bake in the preheated oven until filling is bubbling, about 45 minutes.

Easy, fairly quick and tasty! I substituted cream of mushroom bc it’s what we had and then sprinkled the top with French onion rings. Next time, I’ll sauté veggies ahead of time for added flavor, but all-in-all a good solid meal that we’re adding to the files!
I didn’t use a pie crust which I’m not crazy about. I used leftover gravy, put mashed potato in the bottom and top. As for veggies, I cooked veggies in the microwave. It still came out great. Thanks for the idea.
Made this for dinner to and it came out great!
Used real gravy instead of canned soup to avoid the chemicals. To make potatoes I used chicken broth instead of water, added garlic powder, a little salt and pepper. I used green beans, corn, carrots, mushrooms. very delicious.
Made this for the family tonight and they loved it. The only change I made was to drain the water from the veggies once they were done cooking.
It was good quick and easy. An excellent way to use up leftover turkey! Not quite enough gravy for us but I made more and drizzled over top once plated.

This is a good recipe to use up left over turkey. I substituted cream of mushroom soup for the cream of chicken because that’s what I had on hand. I did not use the pie crust because who needs the extra calories? For me this was just okay, nothing fantastic. Will probably not make this again.
I used leftover homemade gravy, halved the veggies and replaced the other half with homemade stuffing. This was awesome.
I have to say, this is easy and has great flavor! I used a glass pie dish so I didn’t have to work at getting my pie shell into the dish. I also mixed the turkey and soup in a separate bowl and then spooned it into the pie shell. I pressed the turkey down to make plenty of room for the veggies. The gravy thickened nicely (I used walmart brand gravy packs ) and then topped with potatoes I had thawed out from a huge batch weeks prior. I did raise the rack in my oven and broiled the top for 5 mins before pulling it out….wanted a little more crisp on the top. once the pie sat for about 15 mins it was very easy to serve and still hot inside!!

Great flavor and super easy. Since I had a lot more turkey leftover, I made 2 versions: one with pie crust and one without. Both were great. In lieu of gravy mix, you can also use corn starch and bullion cube (works just as well) or chicken broth instead of water. This resurrected our dry leftover turkey into a fabulous quick meal (actually, several meals).
Very good! Even got my picky eaters to try it!
I left out the pastry shell to reduce the calories and fat and the result was delicious!!! this was a great use of thanksgiving leftovers. Will use this recipe after every turkey dinner.
