For many years, the family of my best friend used this recipe. Since then, she has given it to me. The kids adore it!

Ingredients
- 2 pounds ground beef
- 1 ⅓ cups water
- 2 (1 ounce) packages taco seasoning mix (such as McCormick® Original)
- 1 (16 ounce) can hot chili beans, undrained
- 1 (12 ounce) bag nacho cheese-flavored corn chips (such as Doritos®)
- 2 (8 ounce) packages shredded mild Cheddar cheese
Instructions
- Preheat oven to 400 degrees F (200 degrees C).
- Cook and stir ground beef in a large skillet over medium heat until crumbly and browned, about 10 minutes; drain grease. Mix water and taco seasoning mix into ground beef, bring to a boil, and reduce heat to low. Simmer ground beef mixture, stirring often, until thickened, 3 to 4 minutes.
- Heat chili beans in a saucepan over low heat until simmering.
- Spread layers of tortilla chips, ground beef mixture, and chili beans, respectively into a casserole dish; repeat layers until you run out of chips, beef, and beans. Top casserole with Cheddar cheese.
- Bake in the preheated oven until cheese is bubbling and tips of exposed tortilla chips are golden brown, about 15 minutes.
- With all the different shredded cheese combinations you can get these days, you don’t have to stick with just Cheddar either. And you can substitute ground turkey or use shredded chicken as well in place of the ground beef. This is awesome the next day after the flavors have had a chance to meld together even more.
- We serve it with sour cream and salsa in our house.

It is a good recipe as it but if one wants to throw in other ingredients to make it their own that would work. People who thought it too dry may have let the taco seasoning and ground beef simmer too long. My grandson comes for dinner a couple times a month and he is very picky, but he likes Doritos and tacos so I tried this and he and his father almost ate the whole thing. They loved it. I did also, but I think I’ll maybe put some onion in with the ground beef and some garlic next time. If you add too much moisture the Doritos are really soggy so I’d crumble some on top with half the cheese and put the other half cheese in the layers. It’s a very versatile recipe. You can spice it up or eat as is. I will definitely be making it again.
I’m making this again as we speak and it’s nearly midnight here! I used green Bell pepper and fresh tasty toms (tomatoes) with half a red onion which I cooked for a couple minutes with the browned ground beef and the seasoning mix. Unfortunately, I had no beans but last time I added refried pinto beans. Finally I added a small can of corn and a tex mex cheese mixture before putting the dish in the oven. (I omitted salt because the tortilla chips and the seasoning mix are quite salty already.)

It was very tasty but a bit salty. I know I will make it again and eliminate salt where I can.
I followed this recipe, but made a couple modifications to it. After reading some comments about this recipe before starting, I made a couple of minor adjustments that made it really worth trying it. I used two cups of water instead of 1-1/3 and watched the process as the beef was cooked in a covered skillet. I also used my own Keto style mild taco seasoning, instead of “store bought”. This turned out good. I could have used my hotter version taco seasoning, would have been even better. That is to say if one likes it hot and spicy. I also loosely covered the glass dish with aluminum foil while in the oven. I also used Mexican blend cheese. Some samples were taken before the photo shot. That why a corner is missing.
I make this all the time. Sometimes diced tomatoes and rotel with chili’s or salsa. I also use black beans and refried beans together to make it larger. Taco seasoning to taste.
Add diced onion stewed tomatoes cut up small. Top the last layer of meat sauce with Four cheese shredded. Very easy.
I used beans in a mild chili sauce, and added some frozen kernels of corn and warmed that together. Sautéed diced red and green bell pepper and onion, and added that to the seasoned, cooked meat. And added a little bit of shredded cheddar and a sprinkling of cilantro in between each layer. A complete and easy, tasty meal! No issues being dry or tasting bland.

Made this recipe as directed for dinner. It was horrible. Quite dry and not even good as a recipe for nachos. Don’t now where the title “casserole” came into being because there was not enough substance to be a casserole. A total waste of ingredients.
Mine came out much to dry. The doritos soaked up all the liquids. Not sure what would make it better.
I made this for the family tonight for dinner. It was pretty good!! I followed the recipe as it was written, and it turned out pretty tasty!!
This was an ok recipe, but I saw opportunity to improve on it, so thus added a can of Rotel, a fresh chopped jalepeno, and can of black beans instead of the hot chili beans. The wife and I both like mexican food. This recipe helps keep up our desire for it.
So sorry, really wanted to love it. Followed the recipe to a “t.” It was quite dry and lacked that flavor that makes you want to keep coming back for more.
Delicious! I made this using half regular nacho chips and half spicy Doritos. (didn’t have enough Doritos). I cut the amount of the recipe in half and had enough to share with my mom too with leftovers. She also liked it.
The Taco Casserole was absolutely DELICIOUS!! I’ve made a couple of substitutions. I used burrito seasonings instead of taco seasonings, and used black beans instead of hot chili beans. Also, I added some chopped tomatoes for more flavor. It was so good my sister and I came back for seconds!! 🙂
My son would not touch it due to the beans, but he’s 3. My opinion was that it was a bit dry. I think adding a can of rotelo or even a can of diced tomatoes and a small can of green chilies would have added a little extra moisture and that something that was missing. I will try again with adding those items, but it was a good base recipe.

I used Taco Seasoning I recipe instead of prepacked seasoning and cooked dry red beans instead of chili beans. I also added some chopped sweet peppers (I’m always looking to add veggies to my family’s diet). This was a great weekday treat meal and easy enough to let the kids get involved. My whole family loved it. Thank you for sharing.
We liked this one. Made with turkey and regular chili beans (couldn’t find the hot ones). I thought thus might be too dry but it wasn’t. We served it with raw onion and tomato and shredded lettuce. Along with sour cream and salsa.
A nice new flavor, we really enjoyed it at my house! Didn’t change a thing, although I may try this again using shredded chicken in place of beef just to see how that works out, but really doesn’t need any changes at all!
