Low-Sodium Ground Turkey Meatloaf

Trying to eat better while still making my men happy! I combined my favorites from three different recipes to create this. Cinnamon can be omitted if preferred. Fantastic with homemade apple sauce!

Ingredients

  1. 1 (16 ounce) package ground turkey
  2. ½ cup chopped onion
  3. ¼ cup shredded carrots (Optional)
  4. ¼ cup diced green bell pepper (Optional)
  5. 5 low-sodium buttery round crackers, crushed (such as Ritz Crackers®)
  6. 1 large egg, lightly beaten
  7. 1 tablespoon milk
  8. 1 teaspoon garlic and herb seasoning blend (such as Mrs. Dash®)
  9. ¼ teaspoon ground black pepper

Instructions

  1. Preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with aluminum foil.
  2. Place turkey, onion, carrots, bell pepper, crackers, egg, milk, seasoning blend, and pepper into a mixing bowl. Blend gently using your hands until combined. Mold into a loaf shape and place onto the prepared pan.
  3. Bake in the preheated oven until an instant-read thermometer inserted into the center reads at least 165 degrees F (74 degrees C), 40 to 45 minutes.
  4. You can use a loaf pan instead of a foil-lined baking sheet, if preferred.

This was a very flavorful, colorful meatloaf! I substituted red and yellow peppers for green. This is not a recipe you can hide veggies in easily (unless you diced them really small) , but it’s perfect for those who love veggies and flavor. I used my own spices (basil, oregano, parsley, pepper, Accent) and fresh garlic for seasonings. Will definitely make again!

Nice healthy meatloaf. The low sodium seasoning did add some nice flavor to the meatloaf as did the veggies. The carrots I added were still a little bit firm in the loaf so if you prefer softer veggies, you may want to sauté them first. Having leftovers tonight in a cold meatloaf sandwich
