Before trying this recipe, I never thought I could cook a moist meatloaf without bread crumbs. Without a certain, I no longer miss the bread!

Ingredients

  1. nonstick cooking spray
  2. 1 pound ground beef
  3. 1 pound ground pork
  4. 6 medium mushrooms, minced
  5. ½ medium onion, diced
  6. ½ cup shredded mozzarella cheese
  7. 1 large egg
  8. 1 clove garlic, minced
  9. 1 tablespoon dried oregano
  10. 1 ½ teaspoons dried basil
  11. 1 teaspoon salt
  12. 1 teaspoon ground black pepper
  13. 1 pinch red pepper flakes (Optional)
  14. 6 slices bacon, cut in half
  15. 2 cups tomato sauce
  16. 3 tablespoons reduced-sugar ketchup
  17. 1 teaspoon dried oregano
  18. 1 teaspoon dried basil
  19. 1 teaspoon garlic powder
  20. salt and ground black pepper to taste

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C). Spray a 9×13-inch baking dish with nonstick spray.
  2. Mix together ground beef, ground pork, mushrooms, onion, mozzarella cheese, egg, garlic, oregano, basil, salt, pepper, and red pepper flakes in a large bowl until well combined. Form into a loaf shape and place in the middle of the prepared baking dish.
  3. Mix together tomato sauce, ketchup, oregano, basil, garlic powder, salt, and pepper for sauce in a small bowl; pour over the meatloaf. Place bacon slices on top of the meatloaf.
  4. Bake, uncovered, in the preheated oven until bacon is cooked and meatloaf is no longer pink in the center, about 45 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
  5. You can use 1/2 of a fresh mozzarella cheese ball, diced in place of shredded mozzarella if preferred.
  6. You can add cut up veggies (like zucchini or anything you want) to this dish to bake alongside the meatloaf. Just add them at the end of step 2 and cover them with some sauce in step 3.

Delicious! And just what I needed for Keto. I had to cook it twice as long but maybe I shaped the loaf too thick
