Ingredients

  1. 1 pound lean ground beef
  2. 1 onion, chopped
  3. 2 (6 ounce) cans tomato paste
  4. 1 (14.5 ounce) can crushed tomatoes
  5. 2 cups water
  6. 1 tablespoon dried oregano
  7. 2 teaspoons garlic powder
  8. 2 teaspoons salt
  9. ¼ teaspoon ground black pepper
  10. 1 tablespoon white sugar
  11. 12 ounces cottage cheese
  12. ½ cup grated Parmesan cheese
  13. 1 egg
  14. 9 lasagna noodles
  15. 1 pound shredded mozzarella cheese

Instructions

  1. In a large pot over medium heat, cook beef until brown. Drain off all fat. Add onion and cook until translucent. Add tomato paste, crushed tomatoes, water, oregano, garlic powder, salt, pepper, and sugar. Stir until combined and cook over medium heat until boiling. Reduce heat to low and simmer for 1 hour.
  2. While sauce is simmering, blend cottage cheese, Parmesan cheese, and egg until smooth. Set aside.
  3. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  4. Preheat oven to 350 degrees F (175 degrees C).
  5. Spread 1 cup of sauce in the bottom of a 9×13-inch baking dish. Cover sauce with 3 noodles. Cover noodles with 1/3 of the remaining sauce. Top with 1/2 of the mozzarella. Place another layer of noodles and one of sauce over the mozzarella; top that with the cottage cheese mixture. Top with remaining 3 noodles and remaining sauce.
  6. Bake in preheated oven 30 minutes. Sprinkle remaining mozzarella on top and bake 15 minutes more, until golden and bubbly.

I have been making this lasagna for 15 years and it is a family favorite! Not only does it appear at our family functions, It has made it’s appearance on door steps for those who had a baby or have lost a loved one. It is labor intensive but so worth it. While making it – just double up and make one for the freezer too. You get an extra meal for just a few more minutes work.

Next time I will add less salt and use pasta sauce instead of crushed tomatoes and tomato paste to shorten the prep time of the sauce as it didn’t taste that different to me from scratch than the other lasagnas I made with pasta sauce. Good recipe overall but just way too long of a cooking time for lasagna that to me tastes similar to others I’ve made in half the time.

This is the best lasagna recipe I’ve found. My autistic son likes 3 dishes I cook and this is one of them. I sometimes substitute ricotta for the cottage cheese and I add chopped spinach to it to trick both of my children into eating a green vegetable. I never use egg because I don’t like eggs and with the spinach it holds together fine. It’s delicious and I recommend.

my 1st time making lasagna,but i have been cooking since a boy.this turned out perfect! made it as directed just added mushrooms and italian sausage w hamburger only change. easier than i thought it would be, very tasty also. i might add that my long time girl friend always made this that is why i never had. will be doing this more often. thanks

Excellent recipe! A keeper, thank you Linda! This was only my second attempt at making lasagna & this time it turned out great! I did use no boil lasagna noodles, because that’s all I could get delivered, so I baked according to the package, I was worried my noodles wouldn’t be done otherwise. Kept to the recipe with the rest. Yum!

THIS WAS AMAZING! Today was my first time making homemade lasagna and I was looking at the crock-pot recipes, but a lot of them had negative reviews. I looked for a recipe that wasn’t too complicated and had positive reviews and hence I came across Linda’s Lasagna. I followed the receipt to a T! But I didn’t have the patience to boil lasagna noodles and set them aside, I decided to go with oven ready lasagna noodles to save on prep time and it didn’t effect in the recipe in no way, except I did cook it an additional 15 minutes in the oven (because on the package for the oven-ready noodles the baking time is 45 minutes). I also added a box of sliced up mushrooms into the sauce before simmering for an hour, and additional half a cup of water (since the mushrooms would absorb extra water). Instead of oregano I used Italian seasoning and 1 bay leaf (I removed the bay leaf when done simmering). The sauce was THICK and phenomenal! I had several family members come over to eat and they said it was the most delicious lasagna they ever had (I agree wholeheartedly) 🙂 It’s an easy (and tasty) recipe. Will make again.
