Ingredients

  1. 1 sweet potato, diced
  2. 1 ¼ cups water
  3. ¼ yellow onion, chopped
  4. 3 cloves garlic, minced
  5. 1 (.87 ounce) package dry brown gravy mix
  6. ½ teaspoon ground cumin
  7. ½ teaspoon ground cinnamon
  8. ½ teaspoon curry powder
  9. ½ teaspoon ground ginger
  10. ½ teaspoon ground black pepper
  11. ½ teaspoon ground turmeric
  12. ½ teaspoon salt
  13. 1 cup shredded leftover pot roast
  14. ½ cup peas
  15. ½ cup frozen corn
  16. 1 frozen deep-dish pie crust
  17. ½ cup crumbled feta cheese

Instructions

  1. Put sweet potato into a saucepan with enough water to cover completely; bring to a boil. Reduce heat to medium-low and simmer until just tender, about 15 minutes; drain.
  2. Preheat oven to 400 degrees F (200 degrees C).
  3. Combine water, onion, and garlic in a saucepan; bring to a boil, reduce heat to low, and cook at a simmer until onion softens, about 5 minutes.
  4. Stir gravy mix, cumin, cinnamon, curry powder, ginger, black pepper, turmeric, and salt into the water; add leftover pot roast, sweet potatoes, peas, and corn. Cook the mixture, stirring occasionally, until heated through, about 5 minutes; pour into the frozen pie crust. Sprinkle feta cheese over the filling.
  5. Bake in preheated oven until crust is golden brown around edges, about 25 minutes.

  7. You can use left over shredded pork or chicken, too. The crust, feta, and spices are what really make this recipe work. You can change veggies, too; try cooked carrots, white potatoes, or just about any root vegetable.

Made this tonight with leftover Thanksgiving turkey. My family LOVED it. My 15 year old started making yummy noises without being prompted. Both she and hubby asked for seconds. Next time I’ll blind bake the crust for 15-20 min first. Also, I used 4oz of feta, which was great, but next time I’ll leave the salt out of the recipe as the cheese adds enough. I would also boil the potato for maybe only 10 min – 15 was too long. As other reviewers suggested, I used the save potato water. The flavors were great – reminded me of a middle eastern pot pie. Will DEF make again. The 4 starts is solely due to the tweaks.

I made it with turkey and substituted carrots for corn. It was delicious and flavourful. I also used smoked cheddar instead of feta. It was a hit with my husband who doesn’t like turkey.

I made it according to the recipe, but found it bland. I added ginger, ground coriander seed, garlic, cayenne, chickpeas and tomatoes. It helped greatly.

Awesome dish! I had to cook mine slightly longer, but it may be because I added extra water. Also, I used the water from boiling the sweet potatoes for extra flavor. I used ground turkey and it tasted great, I wouldn’t change anything.

I made this using leftover lamb. In lieu of gravy mix, I used the fat drippings, which was about 3/4 C+ 1/2 C water + 1 tbsp flour. I omitted feta because I didn’t have it on hand. The whole family loved it.

This was one of the yummiest things I’ve ever made. My mother loved it too, which isn’t always true of oddly spiced dishes. This is easy, delicious and it goes a long way. We’ve actually made roast beef so we could make this next.

Well this one was an even split in the house, myself and my 17 yr old loved it, but the husband and other son said , no way. It has a good flavor, but called for spices I do not usually cook with. This might have been better if I used different spices my family is more used to, like oregano, parsley, spinach flakes, onion and garlic powder. I never added brown gravy dry mix to anything. This was very good. Next time I try it, I will use the more traditional spices everyone in my household uses.
