Ingredients
- 1 ½ cups pineapple juice
- ½ cup soy sauce
- 1 teaspoon ground ginger
- ½ teaspoon garlic powder
- ¼ teaspoon white pepper
- 4 (6 ounce) skinless, boneless chicken breast halves
Instructions
- In a large bowl, mix together the pineapple juice, soy sauce, ginger, garlic powder, and white pepper. Reserve a small amount of the marinade separately for dipping later.
- Place chicken in marinade, and add enough water to cover. Cover, and refrigerate for 24 hours.
- Heat an outdoor grill for medium-high heat.
- Brush grate lightly with oil. Grill chicken 5 to 7 minutes per side, depending on thickness. Chicken is done when inside is no longer pink and juices run clear.

My family loved it
This recipe did not turn out for me. The soy was overwhelming and I have never had chicken do this before. I am not sure if it was from the pineapple or what but it was almost gummy after grilling. I was very disappointed. 🙁
This is some good marinade. And so easy to make with only 5 ingredients, besides the chicken. The chicken I was afraid was going to be dry, but i couldn’t have been more wrong. It was moist and flavorful. I finished the meal with chicken fried rice and sliced tomatoes. What a great and easy meal.

I made this recipe exactly as written. My wife and thought it was ok. Not something that I will make again, but it might be better over a salad or something like that.
I made it as instructed, marinated for 24 hours and found it to be completely bland. Will not make this again!.

I’ve made it as written, but I prefer to cut up the chicken and made a stir fry with the same sauce, green and red bell pepper, and white onion.. plus some of the pineapple chunks at the end. YUM! Serve over brown rice! I thicken the sauce with corn starch as someone else suggested.

This was a half-win in our home. Half liked, half not. I’m on the fence. I will say that it stayed mostly soft and tender. I’m a killer of chicken…almost always dry it out. I marinated all day, and made enough to cover chicken fully rather than add water. Flavor was mild, not very strong. Probably won’t make again; but thank you for the recipe.
I found this a little too salty… And the flavours weren’t very pronounced. Maybe it was the pineapple juice I used… Not sure…
Wonderful! Made the recipe as is and it was absolutely delicious. We made extra so we’d have leftovers for salads, etc.. and even put 2 pork chops in the marinade. Hubby liked them equally as much. I’ll have to try mine later because I couldn’t stop eating the chicken! Oh, and I only was able to marinade mine for 5 hours – still great! Please make sure you use fresh ground ginger… the spice from a jar won’t work nicely in my opinion. Definitely a keeper!
Super Easy!! We doubled the marinade and added red onion, red bell pepper, orange bell pepper, and fresh pineapple to the chicken. We did not need to add any water to the marinade for it to cover all of the ingredients. This made the best kabobs!
This was REALLY good, I never would have thought to use pineapple juice, but it was great.
This is my new “go-to” recipe. This marinade is good baked or grilled. I keep the ingredients on hand at all times now, and I don’t change a thing.
I added some fresh pineapple to the marinade, grilled the pineapple slices at the same time, saved the marinade and boiled it for a side sauce.
Perfect as listed. Great taste and as moist as I have ever had.
