Keto Stuffed Pepper Casserole

Ingredients

  1. 1 head cauliflower, broken into florets
  2. 1 pound ground beef
  3. ½ cup onion, chopped
  4. 2 cloves garlic, minced
  5. 3 green bell peppers, chopped
  6. Italian seasoning, or to taste
  7. 1 (14.5 ounce) can diced tomatoes, drained
  8. ¾ cup beef broth
  9. 1 teaspoon coconut aminos, or to taste
  10. 2 cups shredded Cheddar cheese

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Place cauliflower in a food processor and pulse into grounds the size of rice grains. Transfer to a large casserole dish.
  3. Combine beef, onion, and garlic in a skillet over medium heat; cook and stir until meat is browned and onion is tender, about 5 minutes. Add green bell peppers and Italian seasoning; continue cooking until slightly tender, about 2 minutes.
  4. Drain excess moisture from the beef mixture. Add tomatoes and beef broth. Simmer until flavors combine, about 5 minutes. Add mixture to the cauliflower in the casserole dish; mix to combine. Shake coconut aminos over the casserole; top evenly with Cheddar cheese.
  5. Bake in the preheated oven until sauce is bubbly, about 35 minutes.

I made this b/c I was looking for a stuffed pepper casserole recipe that didn’t include rice, not b/c it was keto. I made it without the aminos and I subbed Impossible meat for beef and added salt, pepper, and red pepper flakes. Overall, pretty good and I’d make it again.

Made as listed, and the wife loved it. She did think it needed more tomato flavor like real stuffed peppers…so next time we might substitute the broth for tomato sauce or soup.

was a little bland, Jalapenos or some pepper spice would add nicely to this

Wonderful! I am not a stuffed pepper fan. I much prefer the peppers chopped. I substituted Rotel tomatoes and low sodium soy sauce for the regular canned tomatoes and ‘coconut aminos’. Also used a package of frozen ‘riced’ cauliflower instead of fresh. This was absolutely delicious!!!

I used frozen cauliflower rice instead and it.came out delicious
