Ingredients
- 1 spaghetti squash, halved and seeded
- 3 slices bacon
- 1 teaspoon minced garlic
- 2 eggs
- ¼ cup grated Parmesan cheese
- ¼ cup chopped parsley
- salt and ground black pepper to taste
Instructions
- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper; place squash on top, cut-side down.
- Bake in the preheated oven until skin is easily pierced with a fork, about 45 minutes.
- While squash is cooking, fry bacon in a large skillet over medium-high heat until crisp, 5 to 10 minutes. Transfer to a paper towel-lined plate, reserving grease in skillet. Crumble bacon when cool enough to handle.
- Cool baked squash until easily handled. Scrape flesh into noodles using a fork. Place noodles and garlic in the skillet with the reserved bacon grease. Cook over medium heat for 2 minutes; reduce heat to low.
- Whisk eggs and Parmesan cheese together in a small bowl; add to skillet and stir continuously for 3 minutes. Remove from heat and stir in cooked bacon pieces, parsley, salt, and pepper. Serve immediately.

Delicious as written! Once the squash is cooked, this comes together very quickly. A great low-carb alternative to pasta, and a recipe that will appeal to those who aren’t even on the keto diet. I used shredded Parmesan instead of grated, and topped mine with a little extra cheese. A perfect combination of flavors!
I hadn’t found a way to make spaghetti squash that I was that fond of until this! I’ve never even made or tasted carbonara with pasta before but this piqued my interest. Who doesn’t love bacon and cheese? I decided to make my squash in the air fryer, which took about 20-25 minutes at 390 degrees. The skin did get a tad brown but the flesh was perfect. I followed the rest of the recipe as written. I do need to perfect my method of stirring the eggs in as I didn’t get a smooth look and was able to see tiny egg pieces. I used dried parsley from the pantry. Prepping my squash a day ahead made this dish come together quickly for a weeknight meal. My squash had a little sweetness to it but the bacon and cheese helped to balance that.
Overall this was tasty – I liked that the squash picks up the flavor of the bacon so well when sautéed in the grease. I added a little bit more parmesan cheese to kick up that flavor.
I’ve never made or eaten spaghetti carbonara, but this recipe fit my new eating plan perfectly so I thought I would try it. I did double the bacon just because I wanted to. I thoroughly enjoyed this low carb meal!
I’m not following a keto diet, but this is one tasty recipe! Lots of bacon and cheese flavor that compliment the spaghetti squash. Yum!

What in the world just happened in my mouth? Seriously, bacon, egg, and cheese on top of squash is a great idea. I loved the suggestion that it would make a great brunch. Can’t wait to surprise my friends with something special. My tip: Just before serving, I added a diced tomato Learn from my mistake: seed the squash before roasting (please don’t judge).
This was absolutely amazing!!! If I was blindfolded, I wouldn’t have known it wasn’t real noodles. The blend of spices and garlic really help take away the squashy flavor. The consistency and amount of ingredients were perfect. We split one squash among 4 people, so there were slightly less carbs per serving. My kids devoured it! We’ll definitely be making this again (probably weekly!).
Totally Love the Recipe, but not so sure the 26g Carb makes it “Keto” friendly… I guess so compared to actual pasta. Enjoy!
I used a bit more cheese, and the bacon was applewood smoked bacon. it is a good alternative to pasta. I would make again:-)
