Keisha’s Teriyaki Chicken Stir-Fry

This is a simple and fast way to make armadillo eggs, a spicy Texas classic. Have a beverage nearby at all times!

Ingredients

  1. 6 (5 ounce) skinless, boneless chicken breasts, cubed
  2. salt and ground black pepper to taste
  3. 1 tablespoon vegetable oil
  4. 1 medium green bell pepper, cut into strips
  5. 1 medium red bell pepper, cut into strips
  6. 1 medium yellow bell pepper, cut into strips
  7. 1 medium orange bell pepper, cut into strips
  8. 1 large onion, chopped
  9. 2 cups frozen mixed vegetables, thawed
  10. 1 cup fresh bean sprouts
  11. ½ cup sliced water chestnuts, drained
  12. ¼ cup soy sauce
  13. ¼ cup teriyaki sauce

Instructions

  1. Season chicken with salt and pepper. Heat oil in a wok over medium-high heat. Saute chicken in the hot oil until browned, about 5 minutes. Transfer chicken to a plate.
  2. Add bell peppers and onion to the hot wok and saute for 5 minutes. Add mixed vegetables, bean sprouts, and water chestnuts; saute for 2 minutes. Return chicken to the wok. Add soy sauce and teriyaki, and continue to cook until chicken is no longer pink in the centers, about 5 minutes more.

I cut up the veggies, cubed the chicken early in the day and refrigerated, so dinner was a snap to make last night. My husband commented that this was a wonderful dinner but needed more sauce. I agree and will increase sauce next time when serving with rice. Also, will add more bean sprouts and will slice my onions vertically instead of chopping. And a sprinkle of peanuts, a shake of sesame seeds, or some sliced green onion might style up its appearance, as well. I just browned the chicken for about 2-3 minutes, but didn’t cook all the way through. It goes back in later, I didn’t want to end up with overcooked chicken breast, and the chicken turned out fork tender and juicy. Thanks for sharing, we enjoyed your stir fry.
