Ingredients
- 1 pound smoked sausage, sliced
- 1 onion, chopped, divided
- 1 green bell pepper, chopped, divided
- 1 jalapeno pepper, finely diced, divided
- 2 cups water
- 2 cubes chicken bouillon
- 1 tablespoon salt-free garlic and herb seasoning (such as Mrs. Dash®)
- 1 tablespoon Cajun seasoning blend
- 1 teaspoon red pepper flakes
- 1 bay leaf
- 3 (16 ounce) cans kidney beans, drained and rinsed
- 1 (14.5 ounce) can diced tomatoes
- salt to taste
- 3 cups cooked white rice
Instructions
- Combine sausage, half the onion, half the green bell pepper, half the jalapeno pepper, water, chicken bouillon, garlic and herb seasoning, Cajun seasoning blend, red pepper flakes, and bay leaf in a large stockpot; Bring to boil and cook, stirring occasionally, until liquid is reduced by half, 15 to 20 minutes.
- Mix kidney beans, tomatoes, remaining onion, remaining green bell pepper, and remaining jalapeno pepper into the sausage mixture; season with salt. Bring to a boil, reduce heat, and simmer until kidney bean mixture is thickened, 15 to 20 minutes. Remove and discard bay leaf.
- Spoon 1/2 cup cooked rice into 6 serving bowls; top with kidney bean mixture.

This was so good!! The only thing I left out was the jalapeños peppers, that’s just not my thing, but with all of the spices it still had that kick and the flavor was awesome!!!

No changes, smells like heaven cooking
Used black beans, bay leaf and sliced smoked sausage with 1 tsp poultry seasoning and cooked on stove top with 1/2 can rotel and used other 1/2 can rotel in rice cooker with chicken stock and cooked rice there. Used rice and topped with black bean mixture. Was very good
My family loved it. However, I didn’t have everything so I used what I had and it turned out amazing. I used rotel instead of diced tomatoes and the jalapeno and I didn’t add red pepper flakes nor any seasoning salt. I did use 1 tbsp creole seasoning and 2 cups beef broth instead of 2 cups water and 2 chicken bouillon cubes.
I did make this recipe and we loved it. I ommitted the diced tomatoes and it still was an awesome, delicious recipe.

This is a great basic recipe, easy to adjust to taste preferences. Because of others’ cautions about salt, I used slightly less Cajun seasoning

Delicious!! I didn’t have any of the Mrs. Dash so I used Italian herb seasoning and then mixed in a spoon full of minced garlic. Also sautéed some chicken breast with the Cajun seasoning, salt, pepper, and olive oil and added at the end when simmering. Best red beans and rice I’ve prepared! Yum! Spicy enough that I didn’t need to add any hot sauce too. Would not prepare this for someone that doesn’t like spicy food though.

Red beans and rice was phenomenal with blacked catfish
Very good. I didn’t have peppers, so I used a can of green chiles. I cut the red pepper way back and I halved the bullion and water so it would cook down faster. I also cut back on beans, but should have used 2 cans. Will add this to the rotation!
Excellent recipe!!! Delicious and very flavorful! To make it last longer the second day threw some shredded chicken in and it bulked it up and it was super good
Delicious! A great recipe for the Covid 19 quarantine – who doesn’t have a pile of cans of kidney beans you bought in bulk when they went on sale? Love all that is Cajun and this simple and ingredient forgivable recipe is a simple way to enjoy that cuisine. We’ll definitely be making this again and again!
This was great! I left out the salt, jalapeño and red chili flakes so it wasn’t spicy at all- I’ll add heat in next time. I also just mixed everything together and let it simmer for a while (an hour maybe?) until it had thickened. This makes a ton- could easily be halved for our family of 3.
