Italian Mozzarella-Stuffed Meatloaf

The favorite meatloaf in our family has mozzarella inside.

Ingredients

  1. 1 ½ pounds ground beef
  2. 1 medium onion, chopped
  3. 1 (8 ounce) can tomato sauce, divided
  4. ½ cup bread crumbs
  5. 1 egg
  6. 2 cloves garlic, minced
  7. 1 teaspoon dried oregano, divided
  8. 1 teaspoon salt
  9. ⅛ teaspoon ground black pepper
  10. 1 ½ cups shredded mozzarella cheese
  11. 2 tablespoons grated Parmesan cheese

Instructions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Mix beef, onion, 1/2 of the tomato sauce, bread crumbs, egg, garlic, 1/2 teaspoon oregano, salt, and pepper in a large bowl. Pat into a 1/2-inch-thick rectangle on a sheet of waxed paper. Sprinkle mozzarella cheese on top.
  3. Lift up the short side of the waxed paper to start rolling up the meatloaf. Roll tightly, peeling back paper as you go. Seal edges in place. Transfer meatloaf to a loaf pan.
  4. Bake in the preheated oven for 1 hour. Combine remaining tomato sauce and 1/2 teaspoon oregano; pour over meatloaf and sprinkle with Parmesan cheese. Bake until cheese is melted, about 15 minutes more. Let stand for 5 minutes before serving.
  5. I sometimes like to add extra garlic – depends on who is coming over for dinner!

I wish I would have taken a picture. It turned out delicious, very tasty . Kept recipe basically the same, just used1 pound meat and 2 cups mozzarella.

Delicious!! Modified to use Aunt Millie’s Live Carb (4 slices) to make bread crumbs (Keto), baked in cupcake tins, filled 1/2 way, added mozzarella then covered. Baking time will be less. Froze for quick meals. Will make again & often!

This is so good, it’s a family favorite. When my Son visits, he always asks that this be the first meal we make for him. The only modification we make is to spread a package of chopped spinach over the meat before adding the mozzarella cheese, then roll up. We have also used chopped broccoli too, but spinach is the favorite.

I took a shortcut and put half the ground turkey in the pan, added cheese, then added the other half of meat. Tasted good!

We had this last night and everyone enjoyed it. The cheese was a nice addition. I used 1lb hamburger and 1/2lb sage sausage, juet because it’s what I had. Even with the sausage addition, I found ut needed a little more seasoning. Still delicious, hubby said I could make it again. 🙂
