Ingredients

  1. 1 tablespoon olive oil
  2. 1 pound pork neck bones
  3. 4 slices bacon, diced
  4. 1 green pepper, diced
  5. 2 stalks celery, diced
  6. ½ medium onion, diced
  7. 2 teaspoons ground white pepper
  8. 2 teaspoons ground thyme
  9. 1 ½ teaspoons garlic powder
  10. 1 ½ teaspoons dried oregano
  11. 1 teaspoon ground cayenne pepper
  12. 1 teaspoon Cajun or Creole seasoning
  13. ½ teaspoon black pepper
  14. 3 cloves garlic, minced
  15. 1 pound dry red kidney beans, sorted and rinsed
  16. 4 cups chicken broth
  17. 5 bay leaves
  18. 1 teaspoon salt
  19. 4 cups hot cooked white rice, or as needed

Instructions

  1. Turn on a multifunctional pressure cooker, such as Instant Pot, and select the Sauté function. Add olive oil. Add bacon and pork neck bones to hot oil. Cook until browned on both sides, 5 to 7 minutes. Remove meat and set aside. Add bell pepper, celery, and onion; cook and stir for 1 to 2 minutes. Season with white pepper, thyme, garlic powder, oregano, cayenne pepper, Cajun seasoning, and black pepper. Mix in garlic and continue cooking until onion is translucent, 2 to 3 minutes.
  2. Mix kidney beans, chicken broth, salt, and bay leaves into vegetables in the pot; stir well to combine. Cancel Sauté mode and return meat to the pot. Close and lock the lid. Set vent to Sealing. Select High pressure, according to the manufacturer’s instructions. Set timer for 60 minutes. Allow 10 to 15 minutes for pressure to build.
  3. Release pressure using the natural-release method, according to the manufacturer’s instructions, about 10 minutes. Move the valve to the venting position and finish releasing pressure, about 5 minutes. Unlock and remove the lid.
  4. Remove pork bones from the pot. Use a fork to separate meat from bones and return meat back to the pot. Mix well. Serve with white rice.
  5. Feel free to dial up the heat to taste.

Super tasty and the timing for dried beans was great. Omitted the meat as half our table were vegetarians and replaced with impossible sausages. Was a total crowd pleaser! Served with the vegetarian jiffy cornbread mix and homemade honey butter. My only suggestion would be to be careful about the brand of creole seasoning used, ours was on the saltier side

We live in Lafayette, Louisiana and thought this was a very good recipe. Instead of pork neck bones and bacon, we substituted 1 link of sliced Cajun sausage (we always buy Hot) and 1 link of sliced and quartered chicken and green onion sausage (ham bone would have been good here as well). We would never cook rice in our red beans, so we did that on the side (not everyone wants the same amount of rice). We then doubled the whole recipe and it was delicious! We did not find it too spicy at all – just right. Not too much cayenne, but if you’re sensitive to spicy foods, you can cut the cayenne, use mild sausage and let whoever’s eating add their own spice. Good recipe! Aiyeeee!

Delicious! Just make sure to adjust the white pepper, black pepper, cayenne pepper & Cajun seasoning to the heat level you are comfortable with. I omitted the cayenne and reduced the white and black pepper and it wasn’t too spicy but was amazing!

This was a very tasty meal. I’m not super savvy when it comes to insta pot but I am learning. I used a smoked bone in ham since neck bones are hard to find. I cut off a lot of the meat and saved it for other meals. When the beans were done I separated the bones from the meat and then shredded the meat to mix in with the beans. There was probably more meat then what the recipe calls for , oops. It was yummy. I would make this again.

It you want a kick to your red beans and rice, key word “NOLA” then this is the perfect recipe for you. I made it exactly how the recipe said. The meat easily fell off the bone. My 5 year old asked for thirds. If you can’t stand the heat then stay out the kitchen!!!

I will definitely make this again! The most authentic New Orleans taste. Couldn’t find neck bones so just used a couple of bone in pork chops and it was delicious!

This was delicious. The neck bones are not easy to find. One comment about the steps. It’s missing the step for putting the meat back in before the end. In step one it has you remove the meat and set it aside. Then at the end it has you remove the bones from the pot to separate the meat. Where is the step in between?
