Homemade Ground Chicken-Chickpea Burgers

This burger is versatile and lends itself to many great variations. Even my husband, who adores steak, ate every last morsel. The intricate texture, moistness, and distinctive (but not peculiar…) flavor are its greatest qualities. We ate them together with freshly grown zucchini fries from our new backyard vegetable garden. Toast the buns with a slice of your favorite cheese, if desired. You may customize your burger anyway you like; I went with Swiss cheese, ketchup, tomatoes, and spinach, while my spouse chose American cheese, ketchup, and mustard. Prior to eating, make sure to test the doneness of the patties!

Ingredients

  1. 1 ½ cups water
  2. ½ cup dry quinoa
  3. 1 (15.5 ounce) can chickpeas
  4. 8 ounces ground chicken
  5. ½ cup egg whites
  6. ½ cup minced beets
  7. ½ cup oat bran
  8. ¼ cup minced onion
  9. 3 prunes, minced
  10. 1 tablespoon minced poblano pepper
  11. 1 teaspoon salt
  12. 1 teaspoon ground chile pepper
  13. 1 teaspoon ground cumin
  14. 1 teaspoon ground black pepper

Instructions

  1. Bring water and quinoa to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until quinoa is tender, 15 to 20 minutes.
  2. Preheat oven to 350 degrees F (175 degrees C).
  3. Mash chickpeas roughly in a bowl. Add cooked quinoa, chicken, egg whites, beets, oat bran, onion, prunes, poblano pepper, salt, chile powder, cumin, and black pepper. Mix well. Form into 6 equal-size patties. Wrap in aluminum foil.
  4. Bake in the preheated oven until no longer pink in the center and any juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
  5. 1/2 cup egg white comes from roughly 2 eggs.
  6. All seasonings may be increased or decreased to taste.
  7. You may also pan fry the burgers.
  8. This recipe is also easily converted into a meatloaf by putting the mixture in a loaf pan and cooking in the oven for about 30 minutes.

really interesting mix of ingredients.. quite yummy . The dried fruit and beets are a nice mix with the pepper and spices. If you can’t find or don’t have oat bran, some ground oats will work fine
