Hidden Veggie Meatloaf

The most delicious meatloaf I’ve ever had. It is incredibly flavorful and juicy. It’s a hit with everyone I’ve served it to. My kids love it and are unaware that they are eating vegetables. This dish freezes nicely. When I prepare a recipe that requires time (like cutting vegetables) and freezes well, I multiply it so that I can eat one serving that night and store the rest for later.

Ingredients

  1. 1 pound lean ground beef
  2. ⅔ pound ground turkey
  3. 1 egg
  4. ¾ cup finely chopped celery
  5. ¾ cup regular rolled oats
  6. ½ cup skim milk
  7. ½ cup ketchup
  8. ½ cup finely chopped onion
  9. ½ cup finely chopped green bell pepper
  10. 1 tablespoon dried parsley
  11. 1 teaspoon dry mustard powder
  12. ⅔ teaspoon salt
  13. ½ teaspoon minced garlic
  14. ½ teaspoon ground black pepper

Instructions

  1. Preheat the oven to 325 degrees F (165 degrees C).
  2. Combine ground beef, ground turkey, egg, celery, rolled oats, skim milk, ketchup, onion, green pepper, parsley, dry mustard, salt, minced garlic, and black pepper in a bowl until thoroughly combined; mixture will be moist. Transfer mixture into a 9×5-inch loaf pan.
  3. Bake in the preheated oven until an instant-read meat thermometer inserted into the center of the meatloaf reads at least 160 degrees F (70 degrees C), about 1 1/2 hours. Meatloaf may still look pink inside due to ketchup.
  4. If your children don’t like to see vegetables in their meatloaf at all, use your blender and blend the veggies with the milk (I use the chopper blade in a food processor).

Amazing! Everybody loved it, I made some changes since I didn’t have all the ingredents listed: I replaced some ingredients:- Mustard powder = Curry powder- Slim Milk = Almond Milk- Ground turkey = Ground ChickenI added:- 1 table spoon of garlic powder- 1/4 tbs fresh hround black pepperIt could’ve add more: – 1/2 cup rolled oats

I cut up the veg a little more chunky. Plan to add zucchini and more veg to this next time. Used tomato sauce (with low sugar content) instead of ketchup which really helped to cut down the sugar, also spread some on top of the loaf which was nice. Great meatloaf. Thanks

Very tasty. I substituted mushrooms for the celery (personal preference),used only ground turkey and whole wheat bread, which helped hold it all together better. Perfect taste and consistency!!!

This is a great basic meatloaf recipe that you can use & add or take away according to what you have on hand. I made a ground turkey meatloaf in my ninja 3 in 1 slow cooker. I had a tomato that was past its prime so I whizzed it in my blender with an onion, mushrooms, celery, peppers (red/yellow). I was out of oatmeal so I substituted stove top chicken flavored stuffing. I ground up in my blender. BONUS it’s already seasoned ! Gently mixed everything no need for any other liquid as the tomato/stove top was a great binder..

I am desperately trying to find recipes that secretly include veggies to get into my family, but, unfortunately, this was not our favorite. I followed the recipe pretty closely and it was very bland, had a strange texture, and just crumbled apart. Oh well!

I loved this recipe! So did the hubby. My kids were not huge fans, but they don’t really like meat. I added a ketchup brown sugar mixture to the top of the loaf for the last 30 minutes in the oven. Delicious!

I wanted something healthy made with Turkey and don’t want to use bread crumbs. This is perfect. My 1 year old son LOVEs LOVEs it. So does my husband.

This was great. I doubled the veggies and used 2 pounds extra lean ground beef. I also doubled the oats and used an extra egg. It was enough to make 2 large loaves. It could have used a little more ketchup. It did fall apart a little, so I think next time I’ll use another egg.

I left out the green peppers, used all turkey meat and replace the parsley with sage, then baked in muffin papers for 25 minutes. Delicious!
