This quick and simple recipe for hibachi-style fried rice is guaranteed to be a success. The fried rice at hibachi is one of my favorite dishes, so I was determined to make it at home. I like to make my fried rice using leftover teriyaki chicken, but you may use any type of meat or even none at all. It is a fantastic side dish and equally good with or without chicken. Depending on your own preference, you can add more or less garlic.

Ingredients

  1. ¼ cup olive oil
  2. 2 large eggs, beaten
  3. 1 cup chopped grilled chicken (Optional)
  4. ½ cup chopped green onion
  5. 2 tablespoons chopped garlic
  6. 2 cups cooked white rice
  7. 3 tablespoons soy sauce

Instructions

  1. Gather all ingredients.

  3. Heat a wok or nonstick skillet over medium-high heat; add olive oil. Cook and stir eggs in the hot oil until cooked through, 2 to 3 minutes. Add chicken, green onion, and garlic to scrambled eggs; cook and stir until heated through, about 2 minutes.

  5. Mix rice into egg mixture; cook and stir until rice is warmed, about 2 minutes.

This is actually an easy recipe to make. Instead of 1/4 c olive oil, I did half olive oil and half sesame oil. It was delicious!!

Yo definitely have to use cold leftover rice. Usually I add some frozen peas and carrots.

I used day old medium grain calrose rice like they do at Benihana and it turned out well. Next time I’ll use a neutral oil like canola since the flavor provided by the olive oil was a bit on the Mediterranean side. Adding roasted sesame seeds before serving is also good.

I have played around with this recipe quite a bit. I usually grill on Saturdays and use whatever I have leftover on Sunday as the protein in this recipe. I have also used pan seared spam with a can of crushed pineapple. I usually add a bag of frozen mixed vegetables that I add towards the end so they still have some texture but are good and warmed through. Lots of potential for variation with this one. Also, I use coconut aminos in place of soy sauce, much less sodium and no soy for those with dietary restrictions.

This was one of the best fried rice recipes that I’ve made! I was looking for a way to use up some leftover white rice and diced up rotisserie chicken, and this was perfect. I also added in some diced zucchini and a bit of sesame oil at the end. Both my husband and I agreed that this was very good and one that we should make again. Quick and easy too!

Very easy to make, I cooked a whole ” beer can chicken” and used the breast for the meat. That way you still have legs, thighs and wings basically for the same money as just using breasts. Very good!

I used shrimp and peas instead of chicken and green onion respectively. I even tried it with sesame oil instead of olive oil once! Solid recipe. If you like a rich taste, even butter is an option.
