The starter should be made in a glass jar. When the beginning is finished, place the covered container in the fridge. Although liquid may form on the surface of the starting dough and it may have a rather sour smell, this is normal. Before each usage, stir the starter. Make sure there is still 1 cup of starter in the jar after using some of it.

Ingredients
- 7 red potatoes, scrubbed and quartered
- salt
- ½ cup milk
- 2 tablespoons butter
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 2 links smoked beef sausage (such as Eckrich®), sliced into 1-inch pieces
- 1 bunch asparagus, stemmed and chopped
- 2 cups frozen sweet white corn
- 2 cups chopped broccoli florets
- 3 cups beef broth
- 3 tablespoons all-purpose flour, or more as needed
- ground black pepper
Instructions
- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium and simmer until potatoes are very soft, about 20 minutes. Drain.
- Place potatoes in a large bowl. Add milk, butter, and garlic. Blend potatoes until creamy with an electric mixer. Divide mashed potatoes among bowls.
- Heat olive oil in a large skillet over medium heat. Add sausage; cook until warmed through, 2 to 3 minutes. Add chopped asparagus, corn, and broccoli florets. Pour in broth; cover, and simmer, stirring occasionally, until vegetables are almost cooked through, about 5 minutes.
- Scoop 1 cup of broth out of the skillet into a small bowl. Whisk in flour until smooth. Pour broth mixture back into skillet. Stir until a thickened gravy forms, about 5 minutes.
- Serve sausage mixture and gravy over mashed potatoes. Season with black pepper.
- Repeat step 4 until gravy is desired thickness.

Simple, nutritious, and delicious. I did not have asparagus, so I just put in some peppers and extra broccoli. My husband took one bite and said that this recipe was a keeper.
It doesn’t sound like this recipe would be good but it’s terrific! I followed the directions exactly as written and I don’t think it needs any adjustments. I wonder, though, if it would be as good with mashed cauliflower instead of potatoes. Certainly would be even healthier!
It’s good but make sure you make it for more than one person. It’s gets old fast.
This was a good comfort meal…I made it exactly as written. Needed just a little more “pop”, so I added more pepper to the leftovers and a tad more salt. Maybe adding some red pepper flakes while it’s cooking the next time will be just what it needs to make it 5 stars. My kids did like it, though! Thank you for the recipe. 🙂

I made this recipe as written. My wife and I both enjoyed this and I will definitely make this again. Being we enjoy food a little on the spicy side I will probably add some red pepper flake next time to kick it up a notch.
