Grilled Prosciutto and Peach Flatbread Pizza

Ingredients

  1. 1 cup balsamic vinegar
  2. ¼ cup honey
  3. ½ teaspoon lemon juice
  4. ¼ teaspoon black pepper
  5. 2 naan bread
  6. 4 ounces ricotta cheese
  7. 2 fresh peaches, sliced
  8. 1 (3 ounce) package prosciutto, torn into pieces
  9. 3 tablespoons thinly sliced fresh basil

Instructions

  1. Combine balsamic vinegar, honey, lemon juice, and pepper in a small saucepan. Bring to a boil over high heat; reduce to low. Simmer until mixture has reduced down to 1/3 cup, about 15 minutes.
  2. Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  3. Grill naan until faint char marks appear, 2 to 3 minutes. Spread ricotta cheese over the charred side. Top with peaches and prosciutto. Sprinkle with basil. Drizzle with balsamic reduction.
  4. Return flatbreads to to the grill. Grill with the cover on, until the cheese is melted and the bottom of the flatbread begins to char, about 7 minutes.
  5. Goat cheese may be substituted for the ricotta.

Delicious! I thought the peach would make it weird but I was wrong. I find that often, in recipes, the quantity of lemon is too lemon-y for me (and I love lemons!), so I often halve whatever they ask for and that usually works well. In this one, because of the balsamic vinegar, I just dropped it altogether. Everyone loved it so I don’t think I hurt the recipe by doing so.

Absolutely lovely! A fresh bright spin on pizza! We made it with our favorite pizza dough recipe and baked it rather than grilling it, and it was still amazing!

I saw this recipe in the allrecipes magazine and thought it looked good. I was not disappointed! This was delicious! The only thing I changed was using bacon instead of the prosciutto (I’m not a fan) but the rest was the same. Next time i might use a little more bacon because, well, it’s bacon! I used 3 slices of thick cut bacon. This is a quick recipe that I will definitely be saving in my favorites! I loved the sweet & savory flavors together.

This was great. I think the secret is the honey-balsamic sauce. I used regular pizza crusts and just baked them, and I also subbed bacon for prosciutto.
