Grilled Broccoli and Cheese Sandwich

A simple recipe for boneless pork loin roast that is flavorful and melts in your mouth.

Ingredients

  1. 3 tablespoons butter, divided
  2. ¾ cup frozen chopped broccoli, thawed
  3. ¼ cup finely chopped sweet onion (such as Vidalia®)
  4. 4 slices whole grain sliced bread
  5. 4 slices sharp Cheddar cheese
  6. ¼ teaspoon garlic powder

Instructions

  1. Melt 1 tablespoon butter in a skillet over medium heat. Add broccoli and onion and cook until softened, about 5 minutes. Remove from heat and let cool.
  2. Distribute sauteed vegetables evenly on 2 slices of bread. Place 2 slices Cheddar cheese over the vegetables, season with garlic powder, and top with remaining 2 slices of bread.
  3. Melt 1 tablespoon butter in a nonstick skillet over medium-high heat, tilting the skillet to distribute the butter evenly as it melts. Place the sandwiches into the skillet and cook until the bottom piece of bread is golden brown, about 5 minutes.
  4. Melt remaining butter in the skillet. Carefully flip each sandwich, evenly coating the bread with melted butter. Cook until each sandwich is golden brown, 2 to 5 minutes more.

Texture was awful. Taste was bland. Maybe puree the broccoli and onions, and mix it in to shredded cheese, not cheese slices? add some herbs or spices? I will not make this again.

Loved the concept of this and it tasted good. I think there is room for improvement in method. The sandwich was very difficult to flip in the hot butter. I think if you buttered one side of each bread and then put a piece of cheese down first, then the broccoli, and then top with another piece of cheese you’d have better luck with it holding together. I’ll try it that way next but overall a good recipe.
