My sister and I used to enjoy this simple dinner when we were youngsters camping. Years later, I was asked to prepare a meal to bring to my sister’s house for Christmas breakfast. Inspired, I created our camper’s hash. I gave it the nickname “Who-Hash” to make its arrival at Christmas acceptable, and so a tradition was established. We now prepare this Who-hash dish on Christmas morning. The phrase “their last can of Who-hash!” is used to explain how the Grinch stole everything from the Whos’ home in Dr. Seuss’ “How the Grinch Stole Christmas.”

Ingredients
- 1 pound lean ground beef
- 1 cup chicken-flavored stuffing mix
- ½ cup milk
- 1 ½ (4 ounce) cans chopped green chilies
- ½ cup diced yellow onion
- 1 large egg
- 1 tablespoon jalapeno ketchup
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried parsley
- ¾ teaspoon salt
- ½ teaspoon garlic powder
- ¼ teaspoon black pepper
- ½ cup jalapeno ketchup
- 2 tablespoons brown sugar
- 1 tablespoon red wine vinegar
Instructions
- Preheat the oven to 350 degrees F (175 degrees C).
- Mix ground beef, stuffing mix, milk, green chiles, onion, egg, jalapeno ketchup, Worcestershire sauce, parsley, salt, garlic powder, and pepper together for meatloaf in a bowl until thoroughly combined. Form into a loaf shape and place in a baking dish.
- Mix jalapeno ketchup, brown sugar, and vinegar for glaze together in a bowl; spread evenly over top of the meatloaf.
- Bake in the preheated oven until no longer pink in the center, about 55 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). Allow to rest for 10 minutes before slicing and serving.

I gave this 5 stars for the inspiration alone, since I didn’t have all the ingredients. Instead of chicken stuffing, I used garlic butter salad croutons. Also did not have jalapeño ketchup, but added jalapeño salt to it. In addition I covered top with 2 slices of bacon and added 1 cup of cubed Colby-Jack cheese and more green chile than indicated. It was moist and delicious. Thanks for the recipe, which is easy to adapt to your individual taste.
