Ingredients

  1. 1 (8 ounce) package crumbled feta cheese
  2. 1 (2 ounce) jar chopped pimento peppers
  3. 1 teaspoon Greek seasoning
  4. ground black pepper, to taste
  5. ¼ cup olive oil
  6. 2 green bell peppers, cored and cut into quarters
  7. 8 slices bacon

Instructions

  1. Preheat oven to 400 degrees F (200 degrees C).
  2. Stir the feta cheese, pimento peppers, Greek seasoning, black pepper, and olive oil together in a bowl; place about 2 tablespoons of the mixture on each of the 8 bell pepper segments. Wrap each segment with a slice of bacon; secure with toothpicks and arrange on a baking sheet.
  3. Bake in the preheated oven until the bacon is brown and beginning to crisp, about 20 minutes. Serve hot.

These were awesome! I did take the advice of one of the other reviewers and pre-cooked my bacon some as we prefer it crisp.

LOVED THIS! Made exactly, but used a slightly spicier pepper. Don’t overbake if you like the pepper a little crispy. TIP: Microwave your bacon for 5 minutes before you wrap the peppers….it’ll crisp up faster in the oven! If your feta is really crumbly, add a tablespoon or two of cream cheese to the filling…it holds it together easier while you wrap the bacon. Definitely would make this again!

My husband and his friends found this stuffed pepper recipe to go fantasticly over a steak. With a little adjusting you could grill them for a great addition to any outdoor dinner.

Variation-try some couscous for filling, add some fresh spinach and sundried tomatoes,garlic and crumble bacon into mix and stuff whole pepper. Super delicious!
