The very best fried rice you can make at home! Despite being unconventional, the bacon gives the dish a little more crispness. This goes well with meat or chicken.

Ingredients

  1. 1 ⅓ cups uncooked white rice
  2. 1 ⅔ cups water
  3. 3 eggs, lightly beaten
  4. ¼ teaspoon salt
  5. ⅛ teaspoon ground black pepper
  6. 3 teaspoons vegetable oil, divided
  7. ¼ pound bacon, cut into strips
  8. ⅛ cup soy sauce
  9. 1 (10 ounce) package frozen green peas, thawed
  10. 2 green onions, chopped

Instructions

  1. In a saucepan, bring water to a boil. Add rice and stir. Reduce heat, cover, and simmer for 20 minutes. Meanwhile, season eggs with salt and pepper.
  2. Heat 1 teaspoon oil in small frying pan. Pour in eggs. Coat the bottom of the pan evenly with eggs; cook for about 3 minutes. Flip eggs, cook 1 minute more, and transfer them to a cool surface. Let cool, then cut into thin slices. Set aside.
  3. Place bacon in a large, deep skillet. Cook over medium-high heat until evenly browned. Drain, crumble, and set aside.
  4. Spoon remaining 2 teaspoons oil into the skillet with the bacon fat. Stir in cooked rice; break up any clumps and toss to coat with oil. Stir in bacon, soy sauce, peas, eggs, and green onions. Stir and cook until heated through, approximately 3 minutes.

Love, Love LOVE this! My husband thought it was the best ever and he is one fussy guy! I didn’t have the green onions so I sautéed regular chopped onions in the oil before adding the rice etc and we really liked it this way. Will definitely be making again.

I substituted the bacon for tofu marinated in soy sauce, and then cooked the egg together with the veggie mixture. Added rice once the egg was about halfway done cooking. Oh and I also added shredded carrots

Wow. I really didn’t expect this to turn out as flavorful and the right kind of flavor for fried rice as it did. I didn’t have peas so had to do without but followed the rest exactly and it was just so darn good! A little soy on top when serving and this was perfect. Light, not heavy or greasy and good flavor.

This was EXCELLENT! Only recommendation….Ive seen other recipes that call for rice to be cooked ahead of time so it is cold when added to pan. I had some on hand and it was perfect. Rice was not clumpy and sticky. Family gobbled this up.

This recipe is great I just made a few changers for meat I added shrimp I also cooked double the rice my family loves it instead of green onion I cut up a yellow onion. It really does not matter what you add it still would be great.
