Ingredients
- cooking spray
- ½ cup ketchup
- ½ cup brown sugar
- 1 ½ pounds ground beef
- ¾ cup French-fried onions
- ¾ cup bread crumbs
- 2 large eggs
- ½ cup sour cream
- ¼ cup milk
- 1 (1 ounce) package French onion soup mix
- 2 teaspoons garlic powder
- 1 ½ teaspoons salt
- ¼ teaspoon cracked black pepper
- ¼ teaspoon ground ginger
Instructions
- Preheat the oven to 350 degrees F (175 degrees C). Spray a 9×5-inch loaf pan with cooking spray; spread ketchup and brown sugar over the bottom.
- Combine beef, French-fried onions, bread crumbs, eggs, sour cream, milk, soup mix, garlic, salt, pepper, and ginger in a large bowl. Mix well and shape into a loaf over the ketchup and brown sugar.
- Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

Turned out good! We didn’t make the ketchup/brown sugar sauce because my family doesn’t like anything too sweet.
Great meatloaf! I used extra lean ground beef and skipped the sauce on top to save a few calories and it was delicious. It also held together nicely for slicing and made great sandwiches the next day. Husband also gave it 5 stars.
I didn’t think I could like a meatloaf as much as my mom’s, but this one measured up! Didn’t change a thing and my SO and I loved it! Will make this over and over again — such comfort food.
My family really liked this recipe, like a lot. The one thing I did different was I put 6oz of gruyere cheese in the middle to give it a bit more of a French onion soup feeling.

Tasty recipe. Good hot or cold. The fried French onions gave little pockets of deliciousness throughout the meatloaf. I put the ketchup mixture on top as I was concerned it would stick to the pan on the bottom
