French Onion Beef Meatballs

Chicken pieces are cooked in a rice, spice, and dried fruit combination after being coated with a butter and curry mixture.

Prep Time: 15 mins
Cook Time: 20 mins
Additional Time: 10 mins
Total Time: 45 mins
Servings: 4

Ingredients

  1. 1 pound ground beef
  2. 1 cup dry bread crumbs
  3. 1 small finely chopped onion
  4. 1 tablespoon minced garlic
  5. 1 (1 ounce) package dry French onion soup mix
  6. ½ cup Italian dressing
  7. 2 large eggs
  8. 2 tablespoons olive oil, or as needed

Instructions

  1. Mix beef, bread crumbs, onion, garlic, and soup mix together in a large bowl with your hands until well blended; it will be quite dry. Mix in Italian dressing and eggs until thoroughly combined. Cover and refrigerate for 10 minutes.
  2. Pinch off just enough meat mixture to fit comfortably inside your palm, then roll it into ball. Repeat to form remaining meatballs.
  3. Heat oil in a large skillet over medium-high heat. Working in batches if necessary and flipping often, cook meatballs in the hot skillet until browned and no longer pink in the centers, 8 to 10 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C).
  4. Ground turkey or chicken can be used instead of ground beef.
  5. You can make smaller or larger meatballs as desired, but note that larger meatballs tend to fall apart more than smaller ones.

The ingredients sounds tasty as far as the onion soup and italian dressing. But as I was making it I thought 1 cup bread crumbs was a lot….and for us it was. I was disappointed in the final product of the meatball . I made homemade rolls and used my homemade sauce from summer tomatoes for the sandwiches. But that did not help us enough. I could try again but cutting the bread crumbs at least in half.

I had a difficult time keeping them together, maybe too many eggs and dressing? We also thought there were too many competing flavors, again maybe too much dressing? I really wanted to like this but it just wasn’t to our liking.

Good recipe although maybe a little dry due to the one cup of bread crumbs. Next time I’ll probably add a little less. Otherwise made about 20 meatballs that went a long way.

These were delicious! I thought they might have too much seasoning but it ended out tasting perfect for my family’s taste (we like a lot of seasoning). I had a little bit of trouble keeping some of them together but I probably should have worked in smaller batches (I cooked all at the same time). I served mine with egg noodles and brown gravy.
