Fajita Chicken & Rice Skillet

Ingredients

  1. 2 tablespoons I Can’t Believe It’s Not Butter!® Spread, divided
  2. 1 pound boneless, skinless chicken breast halves, cut into cubes
  3. 2 green and/or red bell peppers, thinly sliced
  4. 1 medium onion, thinly sliced
  5. 1 teaspoon chili powder
  6. 2 cups water
  7. 1 (5.7 ounce) package Knorr® Rice Sides™ – Cheddar Broccoli

Instructions

  1. Melt 1 tablespoon Spread in 12-inch nonstick skillet over medium-high heat and cook chicken, stirring frequently, 5 minutes or until chicken is thoroughly cooked. Remove chicken and set aside.
  2. Melt remaining 1 tablespoon Spread in same skillet and cook green peppers, onion and chili powder, stirring occasionally, 5 minutes or until vegetables are crisp-tender. Stir in water and Knorr® Rice Sides™ – Cheddar Broccoli and bring to a boil over high heat. Reduce heat to low and simmer covered 7 minutes or until rice is tender.
  3. Return chicken to skillet; heat through. Serve, if desired, with warmed flour tortillas, lime wedges, sour cream and finely chopped fresh cilantro.

Definitely garlic while cooking the chicken. I also added some cumin and used Knorrs Mexican fiesta rice. The outcome makes it seem like it should have been a much,ore complicated time consuming recipe so you can look like you “slaved over a hot oven” when really you just cut and cooked some peppers and chicken!

I made this for dinner tonight and it was a hit. I made very minor changes – added garlic powder and used Knorr Fiesta Sides Spanish Rice (two packets because my husband is a rice freak). I served it with tortillas and garnished with guacamole and sour cream. I’ll definitely make this again (not doubling the rice if hubby isn’t home).

Okay, I didn’t get finish…. Delicious meal…teeny modifications. It needed a little salt and pepper. Also, a fun way to spice it up would be to add some black beans to it. Also, I added cheese to personal plate and it was delicious.

This wasn’t anything special, and the choice of the broccoli cheddar rice is a bit odd. A Spanish or Mexican rice would probably work better here. I marinated my chicken beforehand, and I’m glad I did because otherwise the chicken would have been pretty tasteless.

This recipe was incredibly easy! I followed the recipe as is minus one addition of corn. Great base recipe and can be modified in so many ways to your own personal preference or as to what you may have on hand. Next time will throw in beans also as some other reviewers suggested. It’s a keeper !

I made this for dinner tonight. It was quick and easy, and tasted great. I followed the recipe with the addition of a tsp of garlic, salt and pepper in with the chicken while browning, I also added a can of black beans and some frozen corn to the rice when I added the chicken back in. Filling, delicious and not too spicy for my 7 year old 🙂

I used regular butter instead of the “I can’t believe it’s not butter” and it came out pretty tasty.

My boyfriend is lactose intolerant so I couldn’t use the Knorr sidekicks, but I kept the idea by using brown rice, fresh broccoli, and shredded lactose-free cheddar. Substituted the I Can’t Believe It’s Not Butter! spread with lactose-free butter as well, and it turned out great! It really is a beautifully coloured dish with great flavours. Filling and easy to make, will definitely make again!

I made this just as directed and it was very good. My family just loved it and wants me to keep making it every week. It is very tasty plus it makes a beautiful presentation. Very colorful.
