This fall-off-the-bone, soft pork, which is a rich fusion of sweet and savory, creates the ideal sandwich whether it is served on a bread or in a tortilla. Excellent on its own or as a side dish as well!

Ingredients

  1. 1 teaspoon extra-virgin olive oil
  2. 1 onion, thickly sliced
  3. 6 pounds pork butt roast
  4. 2 tablespoons extra-virgin olive oil
  5. 1 onion, chopped
  6. 5 cloves garlic, minced
  7. ½ teaspoon red pepper flakes (Optional)
  8. 1 (6 ounce) can tomato paste
  9. ½ cup molasses
  10. ¼ cup brown sugar
  11. 3 tablespoons Worcestershire sauce
  12. 3 tablespoons balsamic vinegar
  13. ½ teaspoon sea salt
  14. ¼ teaspoon ground black pepper

Instructions

  1. Pour 1 teaspoon olive oil into a slow cooker and arrange sliced onion over oil. Place pork roast over onion.
  2. Cook on Low until pork is very tender, 8 to 9 hours. Transfer roast to a platter and discard onion and liquid. Shred pork with two forks.
  3. Heat remaining 2 tablespoons olive oil in a stock pot over medium heat; cook and stir chopped onion, garlic, and red pepper flakes until onion is translucent, about 5 minutes. Add shredded pork, tomato paste, molasses, brown sugar, Worcestershire sauce, balsamic vinegar, salt, and black pepper; stir well. Cover and simmer until sauce is thickened, stirring occasionally, about 30 minutes.
  4. To make a more diabetic friendly version, use 2 tablespoons Splenda(R) Brown Sugar Blend and 1/4 cup molasses with an additional tablespoon of balsamic vinegar. Not sugar-free, but much lower!

The sauce is excellent! I added a heaping tablespoon more brown sugar. it just seemed to need it.

I typically prefer my pulled pork with the sauce on the side but this was really good. The red pepper flakes are optional but I highly recommend using them. Thanks for a great sandwich!
